Description
After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.

We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

33cl bottle, BB 26/04/2013; lot# AM260412. Damn, I feel like being back 5 years ago with the Italian beers, this is a gusher, lost 1/2 the beer in my sink.

33cl bottle, BB? can’t read the torn label. Label which by the way is a clear inspiration from Flying Dog’s labels.

ChrisOs Marvellous Pre GBBF Mega Tasting. Hazy amber beer, little pale tan head. Palate is dry and airy. Good nettley hops with bitter pine. Okay malt base. Dry finish but the hops keep on going.

Thanks to quack-duck for that one. Bottle looks good but a bit complex. Beer in the glass very zippy, nice head. Starts fine spicy, salty hints, modest fruity like lemon. Light sourish notes. Finish a bit drier, but still well balanced. Nice!

2012-10-09, draught at La Fine Mousse, Paris, 7-5-8-4-15=39
Dark amber, red color, with generous creamy head. The aroma is initially hoppy, quite fruity; later it shows some cheese. Good body strength; the mouthfeel is quite round; it has a quite good caramel flavor and moderate sweetness; maybe a bit too much of crystal malt impression; strong bitterness level, with some fruity hop, bitter oranges, and light earthy character. Definitely better than from the bottle.
Bold..

2012-09-05, bottle from La Cave à Bulles, Paris; bb 18/01/2013, batch IIPA 180112, 7-4-7-3-14=35
Cloudy light amber color with compact head, reducing to a sticky layer of foam. Aroma of malt, crystal malt, caramel, hops, some mold, light vegetables, light cereals. Medium body strength; flavor of caramel, malt, some cereals (more than in corresponding American beers), some veggies, crystal malt, enough fruits from the hops, medium level of residual sweetness and quite strong bitterness
A bit dusty and earthy, quite rough; decent, not the amazing one.
