After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.
We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Bottle at Chriso’s Pre-GBBF Shindig, 2012. It pours clear amber with a thick beige head. The nose is pine, citrus (particularly grapefruit), caramel and light spice. The taste is sherbet, resin, pine, hop sack, citrus pith, and metal, with a dry, bitter finish. Medium body and lively, prickly carbonation. Not bad.

Bottle 330ml.Clear medium orange yellow colour with a average to large, frothy, good lacing, mostly lasting, white head. Aroma is light moderate malty, grain, wheat, paper, herbs, yeast. Flavour is moderate to light light heavy sweet with a average duration, herbs, paper, yeast. Body is medium, texture is oily, carbonation is soft. [20120623]
