Description
Based in Edmonton, AB, we’ve set up our production brewery to be 100% exclusive to mixed fermentation sour and wild beers. Our initial barrel investment allows us to guarantee that all of our beers spend time on oak during the maturation period before they are released. Additionally, all of our beers go through a minimum four stage fermentation lifecycle: initial primary fermentation, secondary fermentation on oak, a homogenizing fermentation after blending, and finally a fourth fermentation in bottle to produce the tight, silky effervescence characteristic of these unique beer styles. Some releases will also include a fifth fermentation (fruited blends) between the other fermentation steps.

A murky amber ale with a thin lacing white head. In aroma, sweet fruity malt with prickly pear, light acidic notes, Epsom salts, very nice. In mouth, a nice sweet fruity malt with prickly pear pulp, light tropical fruits, light acidity, light Epsom salts, very nice.

Bottle ordered from Brew Cavern and shared at Watford Tasting. Light fruity and vinous aroma. Murky amber.  No head. Vinous and fruity. Marmalade spice. Light. Thin. Average-fizzy carbonation. Long dry finish. It's fine... at least.

Bottle shared at the mbcw mini beer celebration watford tasting. Thanks to Bearded avenger. A hazed deep reddy amber coloured pour with a halo of beige head. Aroma is semi sweet apple, light sour, brown sugars, grape. Flavour is composed of sour grapes, lemon rind, tangy pithy lemon, green apple. Palate is semi sweet, sour, tangy, highish carbonation.

Bottle split at MBCW '22 (Mispent Beer Celebration Watford), thanks to Bearded Avenger, 13/05/22. Light murk on an amber to chestnut brown pour with a limited head. Nose is tarte fruits, funk, light fruit balsams, wood must, damp oak, prunes. Taste comprises tarte fruits, acidic wash, light fruit balsams, straw, grains, stewed fruits, funk. Medium bodied, fine carbonation, light drying close. Decent enough sour.

very turbid, amber, apricot, very funky yeast character. Low bitterness. Modestly tart.
Medium carbonation. Funky very approachable but not amazing depth. Still super enjoyable.

750mL bottle, pours a clear amber with almost no head. Nose is quite buggy, with lots of white wine tanginess, lots of wild bugs, and general tartness. Flavour is gently tart and heavily buggy, with quite a complex wild yeast profile—there's gentle funk, light tartness, and lots of mixed wild yeast. The Hallertau add a nice white wine tanginess / citrus character to this. Very good.
