Description
Based in Edmonton, AB, we’ve set up our production brewery to be 100% exclusive to mixed fermentation sour and wild beers. Our initial barrel investment allows us to guarantee that all of our beers spend time on oak during the maturation period before they are released. Additionally, all of our beers go through a minimum four stage fermentation lifecycle: initial primary fermentation, secondary fermentation on oak, a homogenizing fermentation after blending, and finally a fourth fermentation in bottle to produce the tight, silky effervescence characteristic of these unique beer styles. Some releases will also include a fifth fermentation (fruited blends) between the other fermentation steps.

Bottle from HOTM. Light hazy orange pour with a white head. Nose is citric peel, sweet spice, orange marmalade, peach. Taste is orange marmalade, lime, zesty lemon. Long bitter citrus linger.

750ml corked and caged bottle. Pours a cloudy pink-orange with a thin, fizzy, short lived, off-white head that fully dissipates. Funky, fruity aroma of bready wheat malt, brett, raspberry, strawberry, peach, light oak and floral hops. Sweet fruity flavour of bready wheat malt, brett, raspberry, strawberry, mango, nectarine, peach, oak and floral hops in a dry, tart, acidic, Lacto finish. Medium body with a smooth, sticky texture and lively carbonation. Tasty and easy to drink. ABV is well hidden.

Funky, fruity aroma of grainy wheat malt, brett, guava, orange, apricot, peach, mango and oak. Sweet fruity flavour of grainy wheat malt, guava, passion fruit, mango, apricot, peach, orange, grapefruit, lemon, brett and oak in a dry, tart, acidic, lacto finish. Medium body with an oily texture and lively carbonation. Juicy and complex.

Trial & Ale Pitahaya - Nice opaque pinkish red with no head. Light fruity and sweet notes. Nice sour and some fruity notes.

Power tasting at Ferris', corked bottle
Hazy to cloudy red colour, the head disappears quickly. Tropical fruits aroma, yoghurt, strong acidity. Sharp flavour, the acidity is very strong, there is some generic fruit, and not much complexity, traces of acetic acid too.

750ml (thx, !) @ Farees'. Appearance: hazy purple with a white head. Aroma: brett and dragon fruits. Taste: along the same lines, but it's pretty muted and straightforward. Overall: ok.

Pinkish hazy. There's a solid dragonfruit note here, and definitely some brett. A bit fizzy and light, with lots of dragonfruit, and a fair bit of tartness. Seems like a straightforward take on fruit brett. Needs a bit more complexity.

750mL bottle, pours a mostly cloudy amber red, no head. Aroma brings out the dragonfruit upfront, which is fairly restrained, along with buggy bretty wild character. Flavour is certainly big on the fruit, with a rather one-dimensional dragonfruit character. Not all that wild or buggy. Low residual sweetness, with only slightly more tartness. Nothing deep or complex here, but it's pleasant, clean, and very easy to drink. Pleasant.

Aroma of spicy rye malt, wheat, apricot, peach, funky Brett, green apple and oak. Sweet, spicy flavour of rye malt, wheat, green apple, lime, apricot, peach, funky Brett and oak in a dry, sour finish. Medium body with an oily texture and average carbonation. Delicious and complex.
