Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle @ What the Funk Denver 2014. One of the first brews that I went for at the festival. Pours a hazy golden orange appearance with a white head. Aroma is funky, lemon citrusy, a touch cheesy aroma with pretty lively carbonation. Really refreshing flavor. Bright fruits (peach / lemon / apricot) in the mouth. Moderately tart with some spiciness. Nice.

From a bottle at the brewery. Aroma has a slight acidity to it with medium phenolic notes, a medium light citrus character and light grassiness. Phenolics are clove and white peppercorn. Moderate fruit esters, mostly citrus but also some overripe stone fruit. Light strawberry that becomes a bit more prevalent as it warms. The strawberry is definitely more of a complimentary aroma than primary characteristic. Pours a slightly cloudy pale gold with faint hints of pink; cloudier and pinker as you get towards the bottom of the bottle. Medium thick, moderately sized, slightly off white head that exhibits pretty good retention. Light lacing and small legs. Flavor is similar to the aroma with a light acidity and hints of oak tannins. Medium light phenolics with a pepper and coriander note along with some grains of paradise. Light bitterness. Moderate fruit character balanced between citrus, pineapple and stone fruit. Medium light strawberry notes that once again do not overwhelm the base beer. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall a very nice twist on the Cask 200 beer. The strawberries play a background role which seems to prevent the typical plastic phenolic note that a lot of strawberry beers can develop while still providing some complexity and fruit character.

Cloudy prune color. Nose is grape forward with cherry persimmon. Taste is minor stale with oak forward ash, cocoa and hay. Tannic bright grape and wild. Very close to phenomenology of spirit in both taste and mouthfeel.

Minor haze, bright white big bubbles fades slow. Golden color. I wish it was easy to pick out this nose. It has a similar nose to spicy Belgian saisons and dubbel beers. Wheat, spice, honey and shoe polish. Taste is good. Minor spice, kind of medicinal beet root and ginger. Lots of honey and some cucumber. Interesting beer.

insanely cloudy with this bright orange glow. Has a very close similarly to HFS abner the nose is beer light and faint. Bits of wheat, oatmeal and clementines. Taste is quite chewy. There’s a bit of rawness to this that’s sticky and dank. Chewy bitterness, astringent turpentine and just a touch of sweetness to back up juicy oranges

Tap at RateBeer Gallery III. Pours hazy gold with a large foamy white head. Aroma is sour - but sour what? Med minus body. Citric sour flavors. Reminds of Berliner Weiss. Light and tasty.

750mL bottle, pours a clear blonde with a medium white head. Aroma brings out farmhouse notes, citrus, and hay. Flavour brings out sharp citrusy notes, farmhouse notes, yeast, and very light funk. Very citric and sharp, finishing lightly tart and yeasty. Moderately drinkable, with a few rough edges. Doesn't stand up to the hype, but it's still solid.

Tap. Pours hazy golden orange, small white head, good lacing. Aroma is grassy, pepper, light citrus. Light sweet, herbal, peppery, almost a bit of mint, light lemon, perhaps clove. Reminds me of black jack gum. Medium body. Interesting.

Tap. Pours hazy orange amber, small white head, nice lacing. Aroma is light dank, citrus, cat piss, Passionfruit. Flavor follows, light sweet, medium bitter, juicy and dank, a bit harsh on the finish. Medium body, oily mouthfeel. Nice.
