Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Bottle. Pours clear golden, merlin white head, good lacing. Aroma is bugs, citrus, oak, hint of acetone. Foldout is light plus tart, light plus funk, citrus, lemon yuzu. Light body, soft mouthfeel.

Tap. Pours lightly hazy orange, medium off white head, good lacing. Aroma is dusty, cherry, lemon, mineral, bugs. Flavor is light plus tart, light plus funk. Merlin body, soft mouthfeel.

Poured from a 500 ml bottle. Aroma is fairly alcohol-forward with nice bourbon notes and faint hints of oak. Moderately strong honey notes along with some biscotti and graham crackers. Moderate chocolate notes with burnt sugar, caramel and toffee. Light notes of dried cherries, raisin and prunes. A bit of an unexpected nutty note. Pours black with a small, moderately thick, dark mocha head that recedes quickly to the edges and disappears. No lacing and sheets instead of legs. Flavor is very sweet with lots of caramel, toffee, burnt sugar and honey. Quite a bit of biscotti, graham cracker and toasted bread notes as well. Moderate chocolate notes and faint roast. Medium bitterness with medium high alcohol notes. Light bourbon and faint oak notes. Medium light raisin, prune and dried cherry notes. Mouthfeel is full bodied and a bit sticky with low carbonation. Low astringency and moderate alcohol warmth. Overall, a better BA imperial stout than I was expecting. The Belgian yeast had me worried that this was going to be hot and overly fruity, but the yeast was well tamed adding just a bit of heat and fruit. Yeast character worked well with the malt profile and honey. Not very toasty or chocolate forward, almost blurs the lines to a really dark barleywine.

Sample at Private Press. Pours inky black with a small brown head and good lacing. Aaron's is rich fudge, vanilla, coconut, oak, honey, bourbon. Flavor is medium sweet, light plus bitter, rich and integrated. Full body, creamy. Excellent

Bottle, 2019 club edition. Pours clear golden, small off white head, nice lacing. Aroma is stonefruit, bugs, dust, oak tannin, skins. Flavor is light plus tart, light plus funk, lovely peach and skin. Merlin body, soft mouthfeel. This has held up wonderfully.

Bottle shared by Molly, thanks! Pours a near clear dull yellow gold with a white head that dissipates to the edges. Aroma has light pear and melon with a bit of tart citrus, some lemon and a slight funky note underlying. Flavor has a nice light tart tropical fruit note with growing citrus and a bit of sweet grains and quince supporting.
