Description
We focus our attention on brewing rustic, unfiltered, aromatic beers that are approachable and unique. We pull from our home brewing background to build beers that pay homage to tradition, but break new ground in American brewing techniques and flavors by blurring the line between beer and wine. We are brewers of big ideas in very small batches.

Draft. Hazy amber beer with a cream head. Summer fruit and grapefruit aroma. Summer fruit and grapefruit flavor. Medium bodied. Good bitterness. Summer fruit and grapefruit linger with light berries.

Poured from a 750 ml bottle. Aroma is full of that typical SARA funk with green grapes, lemon and apricot as well as a bit of a tropical fruit note. Lighter floral esters and a slight herbal phenolic note. Light grain and alcohol notes. Hints of oak. Pours a slightly hazy, golden-orange color with a medium sized, thick, pillowy, white head that recedes steadily to a small film that lingers on the edges. Light lacing and faint legs. Flavor is slightly acidic with a medium light sweetness and light grain notes. Medium bitterness and light alcohol notes. Light oak notes. Lots of lemon, green grapes, tropical fruit and apricots. Lighter floral esters. Hints of earthy, herbal phenolics. A bit of salty, mineral note in the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really solid saison from SARA; this is probably my favorite club beer this year. A bit of a buttery, big packed chardonnay note to this beer, which is nice. SARA funk with a bit more floral and tropical fruit notes.

Poured from a 750 ml bottle. Aroma has moderate notes of tarragon and chamomile. Lighter notes of green grapes, stone fruit and lemon with hints of oak. Light grain and alcohol notes. Pours a hazy, golden-orange with a medium large, thick, pillowy white head that recedes quickly to a small film that lingers on the edges. Light lacing and small legs. Flavor is slightly acidic with a light sweetness and light grain notes. Medium bitterness and light alcohol notes. Moderately strong chamomile notes with lighter tarragon that becomes more prevalent in the finish. Light lemon and stone fruit notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a decent saison. I don't particularly love chamomile and tarragon, but it's not terrible and is well balanced with the base saison.

Bottle 75 cl. Clear golden with a small, creamy off-white head. Slightly tart, funkiness paired with overripe fruit and Bamberg smoke. Medium body, tart fruitiness, with a smoky finish. Sour finish. Complex but the combination of sour and smoke was never a favorite of mine. 261223

Bottle 75 cl. Pours a hazy, reddish amber with a small, off-white head. Funky nose with tart cherries. Medium body, faint berry sweetness quickly overpowered by sourness. Distinct cherry notes. No real bitterness. Complex and interesting. 261223

Poured from a 500l bottle. Aroma is rich and full of dark caramel and toffee notes with quite a bit of burnt sugar, molasses, Tootsie Rolls and toasted bread. Faint notes of burnt bread, roast and chocolate. Light notes of raisin and date. Light bourbon and alcohol notes with faint oak. Hints of leather and tobacco. Pours an almost black color with dark brown hues on the edges and a small, thin, mocha head that recedes quickly and disappears. No lacing and fairly long legs. Flavor is rather sweet with lots of dark caramel, toffee, molasses and burnt sugar. Quite a bit of toasted bread, graham crackers and Tootsie Roll notes. Hints of roast and chocolate. Moderate bitterness and medium low alcohol notes. Medium light bourbon notes and hints of oak. Hints of raisin, date and prune with a bit of leather and tobacco as well. Mouthfeel is full bodied and a bit silky with low carbonation. Low astringency and medium low alcohol warmth. Overall, a solid BA barleywine. Nice bourbon and malt notes. A rather dark malt profile, but without the stronger chocolate and roast notes you would see in a barleywine & stout blend. Instead the caramel and toffee notes are dark. Alcohol notes are well balanced but still allow the bourbon character to show through.

Poured from a 750 ml bottle. Aroma is nice and fairly floral with lighter notes of lemon and green grapes. Light oak notes and light alcohol notes. Hints of earthy, herbal phenolics. Light grain notes. Floral notes include yarrow, elderflower and orange blossom. Pours a slightly hazy, yellow-gold with a medium small, thick, fluffy, white head that recedes quickly to a small film that lingers on the edges. No lacing and faint legs. Flavor is somewhat acidic but very soft and not sharp with light grain notes. Medium low bitterness and light alcohol notes. Moderately strong fruit notes of lemon and stone fruit. Light oak notes and light floral notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, an amazing saison. Floral notes in the aroma are very reminiscent of lambic while flavor is super soft and a bit fruity. Oak notes are light. Hints of SARA funk, but this has something else, more complex, going on with the fermentation notes. Top tier. The gin barrels work so well with this beer.

Poured from a 750 ml bottle. Aroma is very fruity with tons of passion fruit, mango and guava. Hints of gin and faint oak notes. Light grain notes and hints of alcohol. Pours a fairly clear, golden orange color with a medium large, moderately thick, pillow white head that recedes quickly to the edges where it lingers in clumps. Light lacing and faint legs. Flavor is somewhat sweet with a medium light acidity and light grain notes. Medium bitterness and light alcohol notes. Fairly fruity like the aroma with lots of passion fruit, mango and guava. Hints of gin barrel and oak notes. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a solid saison with big fruit notes but definitely not my favorite. It's a bit more acidic than I would prefer and the fruit overwhelms the barrel notes, especially in the flavor. Not much house culture showing through the fruit.
