Description
D9 Brewing Company, in Lake Norman, N.C., was started by two engineers and a doctor, with a mission to inspire and support community through the creation of exciting and original crafted ales. Since our inception in late 2014, we have invested in the scientific exploration of the natural world to produce the highest quality, and unquestionably original, crafted ales. D9 Brewing is striving to become the leading producer of mixed wild fermented beer in the southeastern United States, and has been awarded multiple prestigious medals in the sour and mixed-wild categories at the Great American Beer Festival (2016/2018).

On tap at Flying Saucer - Raleigh, pours a clear pale blonde with a tiny white head. Aroma brings out plenty yogurty lacto notes upfront, with subdued grape skins. Flavour is pronounced on the grape, tasting a bit like Concord grape juice, with just subtle sweetness, a touch of lacto and some grape skins. Pleasant enough, but lacking much depth. Alright.

Pounder: Subtle banana and apricot nose. Shimmering golden, medium head, little retention, good lace. Peach, corn. Light body, moderate carbonation. Interesting take on the style. Fruity esters, but not a coriander bomb.

On draft at Spacebar in Falls Church. Pours a clear pale gold with a white head. Aroma of melon. Flavors are sour fruit. Finish is lingering tart.

Sample at the 6th Annual Craft Beer Festival by The Community Tap on 04/21/2018. Hazy straw color with a thin white head that burns away quickly to a film. Spotty lace. Aroma of fruit, wheat and yeast. Light-bodied with flavors of herbal wheat, spice, fruit and yeast. The finish is wheaty with a fruity aftertaste. Average overall.

Sample at the 6th Annual Craft Beer Festival by The Community Tap on 04/21/2018. Clear amber color with a medium thin off-white head that recedes gradually to an outer ring. Strings of lace. Aroma of maple, tart fruit and yeast. Light-bodied with flavors of sweet maple, tart fruit, spruce and yeast. The finish is sweet and tart with maple and yeast aftertaste. Decent overall.

Not bad, but a bit of a letdown in how subtle and unobtrusive a role the bacon plays in the beer. Mostly a heavy slice of vinegar, citric acid, and bright berry notes, with a minor fig sweetness on the finish followed by barely noticeable traces of cured meat in the fade. Pours gold with a fizzy white head and no lace. Nose is somewhat unpleasant.; "Smells like as a sweat sock," as a friend put it. Not bad--actually rather enjoyable as a basic sour--but I expected something more memorable from a bacon wild ale.
