Description
Scratch Brewing Company is a farmhouse brewery and restaurant located 5 miles from the beautiful Shawnee National Forest in Ava, Illinois. Started by three award-winning southern Illinois home brewers, Scratch Brewing Company focuses on farmhouse beers and other styles brewed with home grown and locally farmed and foraged ingredients. Beers are brewed in traditional styles and enhanced by the innovative addition of local ingredients, including nettle, elderberry, ginger, dandelion, maple sap, and a variety of wood additions, among others.

Draft. A- Grains, faint citrus. A- Gold color, clear liquid, white head. T- Mild herbal spice, hay, grassy. P- Light body, average texture, average carbonation, crisp finish. O- More sassafras in palate than nose. Could use more flavor but a solid classic pils really.

Draft. A- Straw, light. A- Light orange color, clear liquid, white head. T- Incense, mild spice, grains. P- Light body, average texture, average carbonation, balanced finish. O- Enjoyable for sure but I thought this had cherries in is. Just cherry tree bark, thus virtually no actual cherry flavor. That aside, this was very drinkable.

Draft. A- Citrus, slightly malty. A- Gold color, clear liquid, white head. T- Citrus, faint tartness, sweet, passionfruit. P- Light body, bright texture, average carbonation, balanced finish. O- A very light and subtle brew. Super crushable.

Draft. A- Herbal spice, malty. A- Brown color, clear liquid, beige head. T- Licorice, herbal, woodsy, malt. P- Medium body, average texture, average carbonation, slightly bitter finish. O- This has an anise flavor too it, thus I wasn't a fan, but it is certainly a unique take on a brown.

Torst draught, 4/28/23. Clear, ruby-tinted chestnut. Small, beige head to ring. Don't know what Elecampane is but I don't get any glaring adjunct in the nose. Mostly a lightly toasty, mild brown ale. Fruity yeast on the finish. Maybe the root gives a touch of spicy (but not overly) daikon like note? Clean, no alcohol, no hop notes. Soft, almost licoricey, malty, good attenuation. Lighter bodied. Fruity yeast, low specialty malt. Choco-licorice finish. Dull spice. Super interesting!

On tap at Tørst. Pours gold. Basil, lemon, heavy herbal character, grain, tart, citrus. Medium body. Good.

On tap at Churchkey. Hazy pale gold, white head. Fruity, spruce, herbs, medicinal, interesting.

Sampled at The Roost pours a clear gold, big white head. Nose is mild, some light citrus and leafy green hops, some light candy and saison esters. Flavor is clear saison, candy and peppercorns, DuPont all the way, grain, the hop is leafy, more green tea than West Coast. Finishes just off dry, medium bodied. Solid solid table beer.
