Description
Scratch Brewing Company is a farmhouse brewery and restaurant located 5 miles from the beautiful Shawnee National Forest in Ava, Illinois. Started by three award-winning southern Illinois home brewers, Scratch Brewing Company focuses on farmhouse beers and other styles brewed with home grown and locally farmed and foraged ingredients. Beers are brewed in traditional styles and enhanced by the innovative addition of local ingredients, including nettle, elderberry, ginger, dandelion, maple sap, and a variety of wood additions, among others.

500mL bottle, undated as far as I can tell, drunk 2/2/24. Clear, deep bronze. No head, fizzling out immediately. Caramelized ginger with lemony herbal notes and more chicory and caramel on the finish. Some specks of lactic acidity but somewhat light on the culture. Clean. Malty, tart, ginger-forward but not dominated. Lots of chicory character. Mixed culture is round, mellow, pleasingly tart. Caramel and malt sugars abound creating a great balance. Ginger is lovely. Upped my score by the end of the bottle. The flavors are really well-done, especially for its size.

Bottle. A- Faint sourdough, malt, lemon, grains. A- Amber color, clear liquid, beige head. T- Sourdough, faint sourness, mild honey, mild lemon, wheat. P- Medium body, average texture, average carbonation, balanced finish. O- Not like any Kvass I've ever tasted. I wish there was more rye flavor but all in all, very drinkable.

Beer Temple draught, 12/1/23. Slight chill haze. Bronze-brass. Big, fluffy, white head. Botanical! Smells like fantome, but there's a strong actual saison yeast signature too, so that's awesome. But yeah, it's a lot of spice. In the mouth it's spicy, but mellow on adjunct. Leave it to these guys to do a 131 adjunct saison tastefully. It's certainly spicy and botanical but the malt and attenuation balance is perfect.

Keg at torst. Pours hazy golden amber, nose is funk, citrus, floral, garden weeds, taste is funky, floral, oak.

Bottle. A- Roasty, cocoa. A- Dark brown color, dark liquid, tan head. T- Roasty, mild wood, cocoa. P- Medium body, slightly thin texture, average carbonation, balanced finish. O- Not much fig or juniper either. Good enough porter but lacked much of the flavor profile I wanted.

On tap at The Beer Temple, pours a clear dark amber with a medium off-white head. Aroma is full of umami from the mushrooms, subdued French saison yeast, and some bready oaky notes. Flavour is surprisingly nice, with a nice mix of saison yeast, butterscotch, and umami notes. Nice unusual mix of flavours that work well together. Very good.
