The exceptional property of four of our Ghent Gruuten consists in that they are brewed without hops (only the Inferno is brewed with hops). The research into alternatives to replace the hop herb was of course not without a struggle. After a course in biochemistry and several partnerships with various universities, the Ghent city beer saw the light of day. There are 5 different variations: Gentse Gruut White, Gentse Gruut Blond, Gentse Gruut Amber, Gentse Gruut Bruin and Gentse Gruut Inferno. A special “Maîtresse” beer is also brewed every few months. This beer is special because we experiment with different ingredients. Some examples of ingredients are: mango, lime, chili pepper…
The larger volumes, including for export to America, are brewed at the Bavik brewery in Bavikhove.

Clear red brown beer, small irregular creamy off-white head, unstable, non adhesive. Aroma: oxidized, lots of (over)ripe banana, spices, aniseed, cloves. MF: ok carbon, medium to light body. Taste: bit sourish, soft roast, dry touch, some vinegar (infected?), red berries, little bitter. Aftertaste: dry, bitter, hoppy touch, bit lemony, soft bitterness, hint of coffee. Tastes as if something went wrong, possibly an infection?

Clear amber orange beer, big creamy dense beige head, stable, adhesive, leaving a nice lacing in the glass. Aroma: malty, some dried fruits, caramel, maple syrup. MF: ok carbon, medium to full body, creamy texture. Taste: bit sweet, some caramel, sugary touch, spicy, dried fruits, honey. Aftertaste: soft bitterness, bit malty, sweet touch, some ripe banana, nice! One of the better Gruuts until now!

33cl bottle from Beerwulf webshop. F: big, tan, almost good retention. C: coppery to brown, clear. A: sweet malty, nutty, brown sugar, leaves, iron. T: malty, caramel, mellow fruity, nutty, dried fruits, leaves, medium dry on the palate, soft carbonation, not bad, enjoyed.

One of the many Maîtresses made locally by Gruut in Ghent so far - but a clean list of these beers is nowhere to be found so it is anyone's guess just exactly how many have been made so far. Anyway, this is a strong blonde with chili peppers apparently, thanks tderoeck for sharing! Off-white, medium thick, lacing, stable, very mousy head on a cloudy orange peach blonde beer with strings of sparkling clinging to the side of the glass. Rather weird aroma of peach, soggy brown bread, chicken broth-like oxidation, soaking wet cigarette tobacco, fresh basil leaves or fresh thyme, rusty iron, paprika powder, chewing gum, soap, tomato soup. Fruity onset, estery with banana, peach and red apple impressions, sourish edge accentuated by sharp and fizzy carbonation; soft, fluffy, bready malt body, rusk-like with a sweetish honeyish accent, a tad oxidized in the end, but then both a lively 'mint green' herbal accent (the basil and thyme effects from the nose) and a late but effective and unmistakable chili heat unfold, while only a very soft herbal bitterness is established and a sweetish bubblegummy accent lingers, everything tied together by warming, gin-like alcohol enhancing the chili heat element. Very herbal, indeed 'hot' thanks to the chilies, but in essence still a typically soapy and bubblegummy, estery Gruut beer - admittedly though, the very outspoken spicy character of this one bears witness of a somewhat more audacious and daring approach than the (also spiced or 'herbed') other Gruut beers, including most of the other Maîtresses I had to date. Weird, unmatching flavours, but an interesting one, and for that alone probably the best Gruut so far for me, however ephemeral it may be (these Maîtresses are generally brewed only once).

Little cloudy orange beer, small creamy white head, unstable, falls down quickly. Aroma: sweet impression, bit soapy, spicy touch, coriander, slightly smoky. MF: ok carbon, medium to light body. Taste: pretty spicy, malty, chilli notes, some caramel, little bitter, some overripe banana, spicy, chemical impression. Aftertaste: spicy, bit malty, some chilli, smoky touch, little herbal, bitter, some mint, bit oxidized, malty, marzipan.

Pours rather unclear blonde. Small white head. Smell is phenolic, but not as intense as you'd expect from a saison. Taste is sharp, rather bitter, dry, typical saison phenols. OK
