Description
The Alchemist is a family run brewery specializing in fresh, unfiltered IPA. John and Jen Kimmich originally opened The Alchemist as a 60 seat brew pub in the village of Waterbury in 2003. After eight years of success and growing popularity, they decided to open a small production brewery. Today The Alchemist currently operates two breweries in Vermont and distributes Heady Topper and Focal Banger throughout the state.

473ml can. Cloudy, dark yellow-ish, golden colour with average, frothy to creamy, slowly osteoporosing, minimally lacing, white head. Citrusy and slightly tropical fruity, hoppy aroma, hints of grapefruit, lemon, pale malty background with a touch of salty cracker, slightly disguised, dank, resinous hoppy notes come up lately, rather concentrated hop flavours. Taste is crisp, bitter, tropical and citrusy fruity, slightly leafy hoppy, diluted hints of grapefruit and lemon, papery and mineral overtones, pale malty basis with a touch of salty cracker; lingering, mineral and minimally metallic, bitter hoppy finish. Watery texture, dry palate, medium, mildly prickly carbonation. Seriously? This is the top-rated Imperial NEIPA? Admittedly highly drinkable, but not overly flavourful, rather mineral and papery, neither overly impressive concerning appearance nor mouthfeel - hype seems to be all about drinkability and leadership in invention/introduction. Kind of a late bloomer, would have been even more disappointing after having only the first sip.

Can drunk 10/6/23. Dark, possibly clear. Small, tan head atop, moderate retention. Nose is chocolate syrup, roast, prune, plum, various dark fruits and light ash on the end. Lots of caramel and chocolate sweetness. Low alcohol, not hot. Syrupy, sweet, overly roasty. Might be time to fast-forward 10 years, Alchemist....

Canned 9/27/23, drunk 10/6/23. Hint of haze, mostly clear, bright, waxy yellow. Small, white head to ring. Juicy, with good balancing grains and soft yeast notes. Lots of mineral. The Citra seems to supplant the grossness of the galaxy and together it's a juicy, lovely, spicy experience Soft, malty, good attenuation. Lots of spice, fruit ester and moderate mango. Clean, well attenuated, spicy. Just a solid all around drinker without any issues.

Can drunk 10/6/23 at the brewery. Dark. Large, medium tan head, moderate retention. Rich cocoa, vanilla, lots of acidity. Not very Belgian. Moderate lactose dulls everything. Soft, sweet, chewy to syrupy. Lactose adds a syrupy sweetness that is unnecessary. Roast, chocolate and coffee notes with moderate acidity and too much lactose.

16 ounce can from brewery. Jet black pour. Dense, foamy brown head. Draped lacing. Dark roasted malt aroma hints at bittersweet chocolate and treacle. Flavor is rich and chocolatey. Hints of sweet Cuban coffee. Some boozy notes in middle. Rich and robust. As Imperial Stouts go, this is straight forward and delicious.

16 oz can. Thanks to Chalumeaux for grabbing this at the brewery! Aroma is lots of roasted grain, barley, dark chocolate. Flavor follows with Belgian chocolate, deep, roasted malt, backbone, and Notes of dark fruit. Body is full with a bitter chocolate finish. Balanced. This is a beast.

16 oz can. Thanks to Chalumeaux for grabbing this at the brewery! Aroma is wheat, coriander seeds, orange. The flavor is normal example of the style. The coriander is mild and not over done, subtle in the finish. Citrus lasts through out the entire sip. Lightly floral.

16 oz can in a trade with Chalumeaux. Thanks for grabbing this at the brewery for me! Aroma is mild Belgian yeast, lemon peel, and very mild grain. Flavor follows and has a little bit of black pepper in the finish. Light herb underneath everything. Dry texture and very refreshing.

16 ounce can from brewery. Hazy, pale gold pour. Huge, rocky white head. Fragrant, sweet flowery aroma hints at honeysuckle. Zesty malt flavor hints at tangy yeast, citrus, straw, lemon peel and dark berries. There is an underlying earthiness and funkiness that plays well on the palate. Some white peppercorns in the dry finish.
