Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Keg at Mikkeller Exmouth Market brewpub, 21/08/24. Moderately hazed yellow to golden topped with an off white cap that veers to the edge. Nose is funk, herb, citric drizzle, lemon rind, barnyard nip. Taste comprises light stone fruit, herb, farmyard bite, lemon zest, funk, hedgerow, straw, light bretted pangs. Medium bodied, fine carbonation, semi drying close with a light acidic pinch at the curtain call. Solid complex sour.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks. A brushed golden yellow coloured pour with a halo of white head. Aroma is, tangy green apple. Spicy, lemon, salt. Flavour is composed of salty, lacto, sharp lemon, poneapae. Saison yeast, sharp and tangy.

Bottleshare at CBJ. Thanks to Russell and Kate. A light haze on this pale yellowish gold beer, small pale cream colour head. Fairly dry, decent fine carbonation. Mildly tart floral lemon and mildly dried ripe. Slightly tart dry finish. Hmm. Whatever!

[8/24] Bottle. Pretty clear amber with an off white head that fades fast. Aroma of crusty bread, wintery oranges, lightly earthy funk, hard spices. Light bodied, spritzy. Sour but also has some breadcrust sweetness, marmalade oranges and a bitter spicy finish. There's a savouriness to it all but I would have guessed neither mushrooms nor soy sauce lees. The sourness seems persistent yet creamy. [7.5]
[12/25] Clear reddish amber, pale beige head soon at the rim. Aroma of sour plums, light bread, the forest floor, dried whole oranges. Dry and gently sour with crusty bread, dried fruit and long sourish citrus. Funky, elegant, improving. [7.9]
