Description
Hailing from Texas, Topher Boehm has an impressive resume - from Brasserie Thiriez to Jester King to his background in astrophysics - not to mention his unique house yeast. Cultivated from foraged wildflowers native to NSW, think wattle blossoms and banksia, blended with a Belgian saison strain, creating something truly individual which speaks of place. Topher even sprayed the entire brewery with inoculated wort when he moved in, just to make sure everything was literally covered in the house culture.

Nice light oak white wine, , light funky yeasty nose. Light body, very refreshing lemon, white wine, and citrus. Big carbonation. Excellent though not super complex

750ml bottle. Minimally milky, orange golden to amber colour with small to average, frothy, slowly diminishing, white head. Funky, woody and vinous fruity aroma, notes of oak, hints of blue grapes, a touch of yellow stone fruit, minimally zesty, citrusy fruity, hoppy overtones. Taste is dry and mildly tart, vinous fruity, slightly woody and mildly funky, caramel malty basis with some residual sweetness, hints of blue grapes, some oak, plum, a touch of vanilla, slightly citrusy fruity, minimally zesty, hoppy overtones. Slightly oily, watery texture, dry and minimally astringent, simultaneously minimally greasy palate, medium to fine, dense, mildly prickly carbonation. Nice composition with some subtleties, not to agressive (neither tartness nor funkiness), quite vinous overall - good.

750mL bottle. Pours cloudy light red with white head. Aroma has plumbs, wild yeast, bugs. Flavour is pretty juicy with rustic wild yeast, plums, bugs. Tastes well-made, but yeast flavours could be more pronounced. Very enjoyable wild ale.

750mL bottle, pours a cloudy orange amber with a small white head. Aroma has a nice plum character, surrounded by lots of bugs, and a touch of oak. Flavour reveals plenty of bugs -- though they're kind of bugy -- with tart, juicy plums, a little oak, and a buggy, lightly acidic finish. Not hugely complex or expressive, but it's competently made. Good.

Pale plum colour, opaque, with a medium head. The aroma has a mellow plum character, a very light bugginess and a pale wheaty accent. On the palate, it's got a nice bit of plums. Good balance. Solid. The mellow fruit is good here, and I like the base.
