Un olfactif à tendance sauvage et fermier.
Un fond de café et de fruits noirs à la sauce ‘’brettée’’.
Mousse gigantesque et crémeuse qui persiste de longues minutes.
De couleur brun avec des reflets orangés, le liquide est voilé.
En bouche, les fruits noirs sont un peu plus présents malgré le caractère acidulé de l’ensemble gustatif.
Les houblons sont terreux et, combinés avec la levure, rehaussent des accents de poussière.
Un fond de caramel, du café, des notes de prunes fraiches, des accents de mélasse agrémente la palette mais en arrière-plan.
L'ensemble est assez près de l’équilibre mais avec une levure et un ensemble bretté un peu trop dominant.
Cependant, le caractère sauvage a l’avantage de réduire considérablement le côté sucré de la bière.
Je n’arrivais pas à concevoir le mariage sauvage et Dubbel mais je dois dire que je suis surpris du résultat.

A lot of spelt, flowery, grassy, some funk. Taste is along the same lines, bitter. Ok.

Poured from 750mL bottle (Lot 0011; #0886/1200; 2024 vintage). Hazy blonde gold with small white head. Farty, funky saison yeast aroma. Taste of saison yeast, still has a feint soggy bread note (like the Le Fol Saison 2023), but less pronounced, dry-ish. A bit underwhelming, but okay.

750mL bottle, pours a hazy golden with a small white head. Aroma has some nice wild bugs, rustic saison yeast, and a touch of oak. Flavour is dry, with rustic saison yeast, some bugs, and dry earthiness. Rustic, dry and well-balanced, but the most elegant yeast expresion. Good stuff.

Pale, hazy, thin head. Has a nice spicy aroma, with a fruity accent. Medium body. Complex yeast note, has a bit of hop, some apple accents. Pretty good saison.

750mL bottle. Pours murky yellow with a white head. Grainy malts and saison yeast on the nose, very pleasant. Flavour has saison yeast, a bit waxy, grainy malts. Falls a bit flat. Has good components, but seems a bit smothered.

Smells like a mix of American Brett and peppery Belgian esters as well as some fermented vegetables. Taste is along the same lines. Pretty harsh and unbalanced, requires work for sure.

Poured from 750mL bottle (Lot 0002; #0115/1200; 2023 vintage). Hazed yellow gold with full white head. Saison yeast with feint funk note on the nose. Taste is a bit soggy bread with mild saison yeast and light pepper note. Okay aroma, but very average taste.
