Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

Revel cherry wine, b Hazy red colour. Sharp aroma.of cherries. Dry mouthfeel, weak, no cider, faint hibiscus, ok, maybe it's cherries, but this is so simplistic, almost poor.
Boring.

(750ml 2020 bottle from the cidery webshop - 7.8% this vintage) Not sure this is rateable but I'll do it for now. Pours clear medium red with no head, a few whitish bubbles though. Aroma of classic Montmorency cherry, feeling sweetish and slightly jammy on the nose with moderately deep flesh tones, clear cinnamon and some nutmeg and cedar, hints of marzipan despite the lack of pits. Flavour is lightly sweet and lightly to moderately sour with the acidity building later in the sip, again a real Montmorency feel with the impression of sweeter flesh and some spicebox, very soft funk, acidity is more fruit than lacto, soft tannins and a moderately long cherry-laden finish with soft minerality. Light bodied, effectively flat with maybe a hint of frizzante feel. An interesting product for sure, rather unlike anything I've had before which makes it tough to rate. Fun stuff.

A hazed pale blonde cider with aroma of sweet apple, light brett, light lactic notes, very nice. In mouth, a nice sweet fruity apple mix with light acidity, light Brett, very nice. Bottle from cidery.

(750ml bottle from the cidery webshop) Pours clear deep gold to murky blush (depending on sediment) with no head. Aroma of tangy pear, underripe peach, floral white grape and melon, red berries, herbs, aromatic conifers, saline minerals, touch of that chemical twang some pears have (which I could do without, but oddly is influenced by background aromas). Flavour is quite tart but rich pear, again tones of pit fruit, lively but not overly sour volatile acidity, some sweetish lemon or grapefruit juice lactic quality, hints of white grape and tart yellow cherry, softening into the finish with some melon and light grapefruit pulp, herbal accents from the Cab Franc lees, very soft funk to it. Still a nice acidic sting in the finish and aftertaste. Light to medium-bodied, oily, slightly frizzante. Creative and interesting with good complexity, though I found it something to drink in moderation despite the low ABV vs true wine.

A pour at I hope not a super spreader event Weathered. Appearance: hazy purple with no head. Aroma: lots of sweet cherries with some cherry stone notes. Taste: a bit watery, like a cherry kompot diluted by water. Overall: pleasant enough.

(750ml 2019 bottle from the cidery webshop) Pours clear dark orange with a small white head and no lace. Aroma is an intense blast of ultra-ripe crabapple, juicy but with a dry, tart and tannic austerity to it as well, a bit lactic, clear mulchy funk overtones to this one too. Flavour is much drier than the nose would suggest, big bite of acid but it's crabapple acid with some lacto rather than acetic and the mouth adapts, again the crabapple flavour is big here, funk is restrained, solid tannic core, very mineral, long tannic finish with lingering floral accents. Light to medium body, slick, tannic grippy feel. Definitely not for the faint of apple heart with its aggressively tart and tannic Dolgo nature, but fun if you're into edgy ciders.

(750ml 2019 bottle from the cidery webshop) Pours clear deep pink to red with a rapidly fizzing head of white bubbles. Aroma of lemon basil, fennel, crushed flowers, some sort of strange peppercorn (like czar says), mulchy funked apples, acetic twang, soft berry accents, a little barrel feel in there too. Flavour is moderately acidic up front, light apple notes but particularly floral, lemon basil, soft blueberry flavour and a little tannic grip, smooth softly peppery quirky spicebox vibes, very soft funk compared to the nose. Finish is drying, lightly tart, floral-peppery-basil with some blueberry juice and tannin, a little dusty funk. Light bodied, fairly active but balanced carb. Quite a quirky beverage overall, the lemon basil addition is dominant, but I enjoyed it both with food and solo.

750mL bottle, pours a hazy blonde with a tiny white head. Nose is unusual, with plenty of apple sherry, plenty of white wine, a little oak, and crisp apple skins. Flavour is a pretty impressive blend of cider, sherry and white wine; there's crisp white wine tannins, crisp apple skins, and a little sherry. Vinous, gently acidic very funky on the finish, with the ABV showing itself. Very nice.
