Aroma has a nice bugginess to it, dry musty grape skins, and a light rustic character. Flavour is moderately tart, with rustic saison yeast, musty grape skins, and light bugginess. Quite tart and bright; I could do with less acidity, more buggy complexity, more grape must, but this is nicely done. --- Beer aliased from original tick of Bière de Coupage on 12 Apr 2025 at 01:29 - Score: Appearance - 8 | Aroma - 7 | Flavor - 7 | Texture - 6 | Overall - 7.5. On tap at Threefold, pours black with a small tan head. Aroma is pretty fragrant, when plenty of gin, oak, roasted malt, and earthy hops all coherently mixing. Flavour is impressively coherent and clean, with roasted malt, earthy hops, oak, and gin all balanced and cleanly expressed. Odd idea but the execution is hard to argue with. Excellent.

On tap at Threefold. Pours dark brown with a beige head. Lots of roasted malt, pine, and gin botanicals on the nose. Flavour works really well, the gin botanicals and pine complement each other well, nice roast to balance, smooth oak. Fantastic execution.

200mL pour at Threefold. Pours gold with slight haze and white head. Wild rustic yeast and grape must on the nose. Flavour has a lot of musty grapes, rustic wild yeast, some phenols. A bit rough, but still quite nice.

Poured from 750mL bottle (2018 vintage). Clear gold with small white head. Soft tartness, aroma is slightly buttery, at least it’s not acidic. Okay.

330mL bottle, pours black with a small brown head. Nose is sludgy, with harsh cocoa, weird vanilla, and some barrel – very odd and murky. Flavour has a very strange and harsh vanilla character, almost a perfumey bourbon character, and a general sludginess. The base beer isn’t burly enough to support the barrels, but the barrel treatment is just unpleasant. This didn’t work at all.

330mL bottle. Pours black with minimal beige head. Tons of vanilla and burnt sugar on the nose. Flavour has a ton of burnt vanilla, charred wood. Thin body for this ABV. As it warms up, the nose and flavour adopt a manure quality that is pretty unpleasant. Outhouse manure (bad), not farmhouse manure (good).

Good malt, dark colour. A bit of toffee, soft caramel. Solid stuff. Medium bitterness, well balanced.

Dull brown. There's a nice barrel aroma. On the palate, it is on the thin side, and that really removes the support for the barrel character. Feels like a beer that was better last year.
