Hier brouwen we onze eigen lambieken op traditionele wijze en laten deze spontaan vergisten en rijpen op Franse eikenhouten vaten.
Van deze lambieken van verschillende jaargangen vervaardigen we de

Bottle. Color: Slightly hazy purplish red, fast diminishing pink head. Aroma: Tart, fruity grape, funky hints. Taste: Red grape, floral notes, moderate tart, funky hints. Some oak wood and hints of vanilla and hay. Dry-ish mouthfeel. Medium body, just below average carbonation. Compared with most other grape Lambics I've had this one is definitely less vinuous. Though it is very fruit-forward. A bit young maybe, ok, but there are tastier Lambiek Fabriek beers in my opinion.

Head gone in seconds; hazy well-carbonated yellow beer. Musk, grapeskins, citruspeel, restrained lambicaromas. Ultra special nose for a flavoured lambic. More of the same tastewise, deepening the mystery. This is absolutely uncharted lambic territory. Citrus, but dried. Floral - but what? Fruity - but 'exotic' doesn't do it right, nothing comparable to USA hops. Vinous - no, not really. Lunaria, unripe peach. Light body (8.7 %!) but quite slick, and again ideas of grapeskins and grape kernels arise. Alcohol totally hidden. Original - and utterly mindblowing. Wow.

Bottle. Color: Clear pale golden, fast disappearing white head. Aroma: Fruity stone fruit and some tropical fruit. Taste: Fuity mix of grape, peach, overripe apple, some tropical fruit and citrus. Floral and honey hints. Farm-like funk. Moldy hints. (Still) Quite sweet for a Lambic, reminding me of Lambic-Saison blends somehow. Light tartness, moderate sweet. Would like to taste this one again after multiple years of cellaring.

Pours unclear blonde. No real head. Scent is full, funky, citrus. Fun! Mild funk. Taste is sharp, acidic, malty, funk, oak, grassy. Quite enjoyable !

Pours unclear purplepink. No real head. Scent is mild petrol, funk, very mild lambiox, fairly mild grape character. Very easy and light, rose wine style. Taste is a bit more interesting and intense though. Sharp lactic acid, mild funk, raw grapes. Some tannins, earthy, malty finish. Interesting beer.

2021 bottle at Salon piva. Thin body, high carbonation. Med-high sourness, med-light sweetness, light tartness. Moderate wheat bready flavour, a bit of phenols, but otherwise dominated by intense horsey funk. Easy drinking, very good, even if feeling a bit young, slightly too sweet, with more potential to go.
