Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Draught @ City Hops (5/17/19). Opaque dark brown with creamy large tan head, light mocha vanilla aroma, low carbonation, bittersweet mocha taste with cardamom, rum flavor, smooth somewhat thick body, long finish. Great mouthfeel and flavor.

Sampled on draft this beer poured a black color with a small foamy brown head that left good lacing. The aroma was sweet with marshmallow, alcohol and chocolate. The flavor was sweet and boozy with marshmallow, vanilla, and chocolate. A touch harsh. Very long finish. Full bodied and smooth.

Can with no date date. Sat in my fridge for about 3 weeks. Flavor is sharp pineapple, bold pine, strong earth. It also displays all the alcohol. This is pretty harsh. This recipe needs work.

Can without any date. Aroma shows the mango and pineapple without question. All 3 fruits show equally in the flavor. Easy salinity with a light body. Pretty well-balanced overall and well made.

No can dating. Nose is all earthy pine / herbal hints. The flavor is like drinking a raw Simcoe or Amarillo hop pellet. Malt is enough to provide balance. Low bitterness in the form of danky pine. Soft mouthfeel. One-dimensional but well-made.

Draft at Southern Grist 3rd Anniversary. Pours a clearish chestnut brown with a finger of light beige head that lingers. Strong vanilla and strawberry aromas on the nose with some cherry berry as it warms. Sweet on the palate with lots of vanilla and booze with more berry notes. Finishes warming with sweet vanilla throughout.

Draft pour at Southern Grist 3rd Anniversary. Pours a deep brown to black with a small brown head. Cinnamon donut forward nose with vanilla and cacao nib on the nose. More of the same on the palate with the cinnamon and chili coming out with a strong chocolate donut character in the background. Lingering cinnamon and chili tingle.

Fresh 16 oz. can. Pleasing aroma of day-old coffee, roasted malt, slight maple. Flavor is a direct reflection of the aroma. Nice mouth feel and not overly sweet. Maple is subdued. Coffee is forward. Nice!
