Description
Cellarmaker Brewing Company has been in the works for quite some time. Look for our beers to start making their way around better known beer bars and beer focused restaurants in San Francisco starting in September.
We have a tasting room in the same building as the brewery and will offer tasters, pints, and growlers. Some beers may be bottled further down the line but for now it's all draft. The only way you can take our beer away is in the form of a growler - which by the way, is a great way to drink beer!
Look for a focus of plenty of hoppy beers, belgian-style saisons, dark beers, and sour beers. We are huge fans of wine and bourbon barrel aged beers as well so it's only natural for us to have a barrel program. Think bourbon barrels loaded with big chewy imperial stouts, excessively hopped IPAs, fruited sour beers, and funky saisons. This is what we love. This is what we are all about. We hope you are too!

Poured from a 16 oz can dated November 28, 2023. Aroma is fairly hop forward with some passion fruit, stone fruit, guava and notes of tropical citrus. Light dank, resin notes. Light cracker malt notes and hints of alcohol. Pours a clear, brilliant, yellow-gold with a large, fairly thick, fluffy, white head that recedes steadily to a small film that lingers in clumps on the edges. Flavor is slightly sweet with medium light cracker malt notes. Fairly strong bitterness with light alcohol notes. Moderately strong hop notes of passion fruit, guava, peach and tropical citrus. Light dank, resin notes linger into the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid West Coast DIPA. Nice malt profile with balanced bitterness and alcohol notes. Solid hop profile in aroma and flavor.

Poured from a 12.7 oz bottle. Aroma is very vanilla forward with quite a bit of chocolate notes and hints of roast and caramel. Faint oak notes with light alcohol and bourbon notes. A bit more caramel and graham cracker as it warms. Pours jet black with a small, thin, dark mocha head that disappears immediately. No lacing and super long legs. Flavor is fairly sweet with lots of bakers chocolate and caramel with lighter notes of toffee, treacle, molasses and graham crackers. Hints of roast. Medium bitterness and medium light alcohol notes. Quite a lot of vanilla. Hints of oak and bourbon. Mouthfeel is full bodied and slick with low carbonation. Low astringency and medium alcohol warmth. Overall, a solid BA stout. The vanilla notes are really nice but strong. So much so that the bourbon notes are kind of missing. Solid malt profile with really nice chocolate notes. Maybe I'm tired of the style. Maybe there is something slightly off about this beer. I don't know, but while it's good it's not hitting on all cylinders for me.

Tap at Gourmet Haus. Pours clear, light amber with light tan head. Very boozy, with grapefruit and tropical fruit. A bit cloying with slight pine. The ABV is really present here and it goes down hot.

Tap at Ale Arsenal. Pours clear and light gold with white head. Moderate high amounts of tropical fruit, resins and pine. Flavor and aroma are similar.

Poured from a 250 ml bottle. Aroma is rich and malt forward with layers of caramel, toffee, burnt sugar and toasted bread. Lighter notes of molasses and hints of roast and chocolate. Raisin, fig and date notes. Light bourbon notes with moderate alcohol notes. Hints of charred oak and leather. Pours dark brown with lighter brown hues on the edges and a small, thin, dark tan head that recedes immediately to the edges and disappears. No lacing and super long legs. Flavor is fairly sweet with loads of caramel and toffee. Lighter malt notes of toasted bread and burnt sugar with faint chocolate, roast and molasses. Moderately strong bitterness and medium alcohol warmth. Light raisin, fig and date notes. Light bourbon notes with hints of charred oak. Mouthfeel is full bodied with low carbonation. Low astringency and moderate alcohol warmth. Overall, a super nice barleywine. While strong and boozy, the alcohol notes are not hot and harsh. Sweet and full bodied without being sticky. Really nice malt profile. Despite the age in barrels the bourbon notes are not particularly strong compared to he malt. I really like this beer and the format is perfect.
