Description
Cellarmaker Brewing Company has been in the works for quite some time. Look for our beers to start making their way around better known beer bars and beer focused restaurants in San Francisco starting in September.

We have a tasting room in the same building as the brewery and will offer tasters, pints, and growlers. Some beers may be bottled further down the line but for now it's all draft. The only way you can take our beer away is in the form of a growler - which by the way, is a great way to drink beer!

Look for a focus of plenty of hoppy beers, belgian-style saisons, dark beers, and sour beers. We are huge fans of wine and bourbon barrel aged beers as well so it's only natural for us to have a barrel program. Think bourbon barrels loaded with big chewy imperial stouts, excessively hopped IPAs, fruited sour beers, and funky saisons. This is what we love. This is what we are all about. We hope you are too!

Bottle. Pours clear mahogany with a small tan head and minimal residual or lacing. Aroma is bourbon, oak tannin, dark sugars, werthers, toffee, date. Flavor is quite sweet, light bitter, boozy without being cloying. Excellent Barleywine, but a clear second to the the masterpiece that is X.

Bottle at share. Near black pour, chunky, flat. Aroma is roasty, sweet and fruity. Taste comes with a thick, mealy feel, banana, a little brown sugar. Thick, syrupy feel.

375ml bottle at share. Near black pour, flat, oily. Vanilla peaks out of the aroma just above chocolate, sweet. Taste brings an almost syrupy feel, sweet, vanilla, chocolate, deep, slick, latent booziness.

375ml bottle pours out dark brown topped with a small head. Nose is great sweet chocolate pitfruit toasted nuts and bourbon barrel. Taste is more of the nice sweet malts rich caramel some chocolate big barrel. Very good

375ml bottle pours out amber cola color topped with a small head. Nose is sweet caramel toffee malts rich bourbon barrel booze some vanilla. Taste is more of the nice sweet malts rich barrel treatment and a pitfruit kick.

From a can purchased at Ale Arsenal. A bit of a different recipe from the listing (ginger, cinnamon, nutmeg & vanilla) and an ABV of 7.5%. Nice to see a holiday ale without Anchor on the shelves this year. Ginger and nutmeg overtly lead the aroma. Massive spice all around. Clear amber-gold with light tan head that collects well and then slowly fades. Flavor is spice, with ginger being the lead flavor here. A bit of rich malt and bread. Slight black fruit and candi. Lots of sugar in the finish here, and a touch of campfire as it warmed.

On tap at the Jack London CHoP. Aroma is rich and malty with layers of caramel, burnt sugar and toffee. Some toasted bread, chocolate, treacle and hints of roast and nuts. Light oak and bourbon notes. Medium light alcohol notes. Pours dark brown, almost black with a small, thick, creamy, light mocha head that recedes fairly quickly to the edges where it lingers. Flavor is fairly sweet with a huge malt character. Tons of caramel, toffee and burnt sugar with lighter notes of toasted bread, chocolate, treacle and nuts. Medium bitterness and medium alcohol warmth. Light notes of raisin and date. Light bourbon and faint oak notes. Mouthfeel is full bodied with low carbonation. Low astringency and low alcohol warmth. Overall, a solid barleywine. Nice barrel and malt notes. Very Rick and complex malt profile. Fairly boozy, but not in a bad way. Solid bourbon and oak notes.

Poured from a 16 oz can dated November 20, 2023. It looks like this is a new recipe as the listed adjuncts are ginger, cinnamon, nutmeg and vanilla. No mention of cloves or raisins. Aroma is Christmas in a can. Lots of ginger cinnamon and nutmeg with lighter vanilla notes. Gingerbread, toasted bread, graham crackers, and caramel. Hints of alcohol. Pours a fairly clear auburn brown color with amber hues on the edges with a medium large, thick, pillowy, tan head that recedes steadily to a small film that lingers. Light lacing and small legs. Flavor is somewhat sweet with lots of gingerbread, caramel, toffee, toasted bread and graham cracker notes. Medium light bitterness and light alcohol notes. Moderate ginger notes. Light cinnamon and nutmeg notes with a bit of vanilla. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, I was expecting to hate this beer as I don't love cinnamon beers, but this is pretty good. It's pretty damn close to liquid gingerbread. While the cinnamon and vanilla are present they play second fiddle to the ginger. The ginger works super well with the malt profile and the vanilla wraps it in a neat bow. It's a fun beer, but one is definitely enough.

Can. Pours a clear light gold with a white head that dissipates to the edges. Aroma has dank pine and a bit of onion with some earthy marijuana supporting. Flavor has strong dank pine and grass with some marijuana and a bit of onion coming through.
