Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

750ml bottle at Matt?s place. Pours a clody blonde with a high white head. Aroma if full of brett yeasts with flowery notes. Taste is tart, very bitter with flower and grass notes. Good for saisons fans (but I am not :-) ).

750mL bottle, pours a clear golden with a medium white head. Aroma brings out wild yeasts, elderflower, and dry grainy notes. Flavour is spicy, wild and grainy, with brett yeast, dry grainy notes and spiciness. Wonderful balance, with a spicy dry finish. Excellent.

Bottle - Perfumy stone fruit and funk. Clearish gold with a nice white head. Sweet and Perfumy with light funk and a long finish. Lots of perfume, nice.

750 ml corked bottle. Pours a hazy dark amber with full head. Aromas of funky/bretty yeast, creamed bananas, and wheat with mild floral notes. Flavors of earthy floral yeast, plastic, honey, and waxy lemon. Interesting.

Bottle thanks to Brandon. Pours a hazy yellow with medium white head that lasts. The aroma is yeast, honey, floral. Medium mouth, lemon zest, honey, floral, tart finish, very good.

Cloudy golden color. Fresh wood sap aroma, light mint, glue. The body is leaner than expected, it has some residual sweetness, can feel some of the spruce, and this is not what you expect from beer, a bit soapy.

750mL bottle, pours a cloudy orange with a medium white head. Aroma brings out farmhouse notes, some light spruce, and some wild yeast. Flavour is quite complex, with notes of spruce, lovely wild critters, and some earthy notes. Quite complex, with the spruce incorporated subtly and expertly. Excellent.
