Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

750mL bottle, pours a say golden orange with a small white head. Nose brings out lots of elderflower upfront, followed by some funky brett, and light zest. Flavour is nice and funky, with medium brett notes, followed by elderflower and a touch of citrus. Excellent incorporation of the elderflowers and the brett is nice and bright at this stage. Great stuff.

2015 version. The beer is light amber, medium cloudy, The head is puffy and white. The aroma is dusty malt, cucumber, kiwi, pear, pine and spice. Lightly tart pear cider with crushed pine, or well, spruce, I guess. Taste is a bit odd. Lots of dusty, earthy flavor. Grain is a bit flat. Less fruit. Some sweetness but pretty dry at the end. Little bit of a sour twang. Bitter woody flavor. Creamy, full feel. Interesting beer.
