Description
Propolis was established in June of 2012 with the sole intent to produce high-quality handcrafted herbal ales inspired by Old World tradition, local resources and the rhythms of nature. Our ales are brewed with various wild-crafted herbs and are seasonally based. Many of our Ales blend several styles and are hard to classify by traditional beer guidelines. We are primarily inspired by the farmhouse tradition of France and Belgium, as well as Old World Ales that no longer exist. We are artists and scientists at heart and we aspire to challenge the norm.

Tap at Chuck’s. Hazy orange color with small white head. Aroma is grainy, some elderflower. Taste is grainy, dough, peppery, not so much elderflower. Peppery finish. Medium carbonation. Quite good, but not too amazing.

Draft pour at Special Brews. 6 oz pour. Always enjoy an opportunity to try their beer, without paying a super bottle premium. Hazy golden pour with a patchy fizz head. Tart aroma, with mixed fruit. A wonderfully tart flavor with apple and white grape. Light body, very cider like. Perfect amount of tart going on here. Very cool constant. Nice apple pear finish. Very nice beer here.

Bottle. Amber beer with a low cream head. Sour and light spice aroma. Tart/light sour flavor with light herbal notes. Medium bodied. Tart/light sourness lingers with light herbal notes and light spice.

Bottle. Pours a near clear earthy gold with a white head that dissipates to the edges. Aroma has earthy funk and sweet grains with light berries and a hint of yogurt. Flavor has a good amount of berry that is slightly tart with sweet grains and light funk.

Sampled at the Ballard Farmer’s Market. Pours a clear deep amber with a tan head that dissipates completely. Aroma has a good amount of juniper with light fruits and a touch of flora. Flavor combines juniper and light fruits well with light grains backing.

Bottle. It pours a clear golden color with a massive frothy white head. The aroma is really nice with light flowers, baked bread and light cobweb-like yeast presence. The flavor is the same with some lightly acidic/sweet white grape, baked bread and hints of bitter/phenolic brett. Very soft on the palate. The mouth feel is very smooth and slick with lower than average carbonation. A touch on the acidic/grapey side and the carbonation is a tad low for the style, but the flavor and aroma are both on point. Very nice.

Bottle. Pours a near clear amber with a white head that lasts throughout the beer. Aroma has notes of flora and sweet fruits with cedar and grains underlying. Flavor has lots of sweet fruits supported by flora, sweet grains and a bit of funk in the finish.

Bottle. Pours a near light gold with a white head that dissipates to the edges. Aroma has light tart fruits with a bit of spruce and light gray supporting. Flavor has a decent amount of spruce with a growing light tartness and a hint of grain.
