These guys seem to always put out something good. Also, always cool to find on draft, opposed to.paying the bottle premium. Schilling Cider House, Seattle. Rose pour, with a fizz ring head, high carb. A fantastic apple aroma on this. Flavor is bold. Red apple, caramel, bold flavor. Not atypical cider by any means. Has a kick to it. Extremely pleasant cider here. Enjoyed this a ton.

Tap, rating #3600. Hazy orange color with no head. Aroma is red apples, yeast, some vanilla. Taste is red apples, "mehlig", with a tart bite and a nice amount of tannins. Bone dry finish. Nice cider, but the tannins are a bit too much like having flour in your mouth. Still very good, but not totally for me.

On tap at Structures, pours a hazy golden with a small white head. Aroma brings out nice farmhouse yeast, followed by crisp apple and light champagne. Flavour has a nice farmhouse quality to it, with medium sweetness, champagne-y yeast and light funk. Wonderfully constructed, with lots of depth. Excellent.

750mL bottle, pours a clear blonde with no head. Aroma brings out light-to-medium sweet apples, champagne yeast, and a touch of wild funk. Flavour is bone dry, with champagne yeast, wild notes, and dry apples that pucker. Super dry and funky. Excellent cider.

Bottle sampled at Alpenfire, pours an opaque cloudy orangey pink with a all off-white head. Aroma brings out candied apples, some caramel and a touch of funk. Flavour is like a caramel apple, with medium sweetness, caramel and light funk. Quite complex - this apple varietal is really nice. Great stuff.

Bottle sampled at Alpenfire, pours a hazy golden blonde with a small white head. Nose brings out medium funk, a touch of residual sugars and medium dry apples. Flavour is bone dry, with puckeringly dry apples, light funk, and yeast. Super dry, almost difficult to drink, but very elegant as well. Nice stuff.

Bottle sampled at Alpenfire, pours a hazy golden blonde with a tiny white head. Aroma brings out light funk, some champagne yeast, and medium dry apples. Flavour is very dry and funky, with lots of barnyard funk, light champagne yeast, puckering dryness that dries the mouth, and a touch of residual sweetness. Brilliantly crafted, with high complexity. Excellent.

Bottle sampled at Alpenfire, pours a clear blonde with a few bubbles. Aroma brings out some light funk, some champagne yeast and medium dry apples. Flavour is quite wild and funky, with barnyard funk, dry apples, and puckering dry wheatiness. Low residual sugar. Quite complex. Excellent.
