The Hollows is an initiative by Jason Pellett, former brewer at Orpheus Brewing in Atlanta (USA). Jason moved to Amsterdam for love and has started brewing beer again on a small brewing system. Small batches. Big beers.

Black with a small light brown head. Aroma of big vanilla, milk chocolate, caramel. It’s like British Quality Street Christmas chocolates with a bunch of hot booze thrown in. Heavy sweet, too much for my liking, and hot with alcohol but still pretty tasty.

Bottle from Drankenhandel Leiden. Roasted malt with coffee and chocolate, some sugar and alcohol, cocoa. Fairly sweet with a mild bitterness, full body, bit sticky feel. Sweet but solid rounded Stout.

Black with a ring tan head. Cinnamon, dark chocolate, roast, vanilla and caramel in the aroma. Flavour is heavy sweet. Too much. Full bodied with very soft carbonation. Good, but I wish the sweetness and flavourings were toned down.

Schenkt pikzwart met een dun bruin laagje schuim dat echter niet lang blijft. Geur is wat fruitige alcohol, koffie (zurig), geroosterd. Retronasaal ook fruitige alcohol, wat meer koffie, en iets caramel/toffee. Smaak is vrij zoet, maar het koffiezuurtje en de geroosterdheid brengen dat mooi in balans. Wel behoorlijk warme alcohol. Niet al te veel koolzuur. Medium tot volle body. Lange afdronk met stroop, geroosterdheid, iets bitter. Mag van mij wel een procentje of 2 minder, maar wel erg lekker.

Bottle from Drankenhandel Leiden. Sweet, full and sticky, with roasted malt, coffee, sugar, chocolate, some chili, alcohol, vanilla. Big sweet sugary flavour, bit much, but the aroma and body make up for the sweetness.

330 ml bottle. Pours black with little head. Aromas of sweetened dark coffee, dry vanilla and roasted malts. Flavors of creamy rich coffee, chocolate nougat, dry vanilla and rich roasted malts. Warm finish. A solid Imperial Stout. Very good.

330 ml bottle. Pours black with short foamy tan head. Aromas of creamy coffee/mocha, roasted malts, vanilla and a little bit of smoke. Flavors of thick almost syrupy chocolate, creamy coffee, rich vanilla and oily roasted malts. Warm finish. Excellent.

Pours black, scent is dry, intense, roasted coffee. Taste is full, roasty, sharp, coffee forward. Very good, but not my preference. Coffee forward for sure.

Schenkt als motorolie, dik en zwart, en een dunne donkerbruine kraag die niet lang blijft. Geur is zoet, vanille, zoete chocola, een tikje "vegetal" (van de peper ws). Retronasaal: zoet, chocola, vegetal. Smaak is vol zoet, ook een vaag zuurtje, lijkt geen infectie, eerder ook van de peper. Dikke volle body. Peper hitte is medium, blijft wel hangen. Ik vind het lekker, maar het mag van mij wel wat minder zoet.

(Bottle, In De Wildeman, Amsterdam, 28 Feb 2026) Black colour with brief, bubbly, beige head. Malty, roasted, vinous nose with notes of sweet espresso, dark chocolate, cacao, vanilla and roasted nuts. Malty, roasted, vinous taste with sweet espresso, cacao, dark chocolate, vanilla, cashew nuts, soy sauce, liquorice and a balanced cacao bitterness in a warming, sweetish finish. Full body, sweet. Rich, warming and powerful. And with a name that sounds like it would be taken from a song by Ulcerate. Very nice.
