Welcome to the sake revolution! Brewed like a beer, enjoyed like a wine. Kanpai means“cheers”in Japanese. KANPAI sake is naturally low in sugar, gluten-free, sulphite-free, preservative-free and vegan.

The pioneers of British sake, founded in 2016, KANPAI is the UK’s first sake brewery. We craft award-winning modern British sake, using traditional Japanese ingredients and techniques. We take a zero-compromise approach to our ingredient sourcing and a patient approach to our low-temperature extended brewing methods.

KANPAI is experimental at heart and ongoing exploration forms a huge part of our motivation to brew sake - we launch one-off limited edition and seasonal styles, alongside our core range sakes. Our sake is crafted by us, for you; using the very best ingredients, custom equipment and love. All KANPAI sake is made from start to finish on site in our London Bridge brewery. We even hand fill and label every bottle ourselves to ensure the highest quality.

Above all, good sake deserves to be enjoyed amongst old friends and new! For this exact reason we were inspired to create the first sake taproom in Europe - originally opened in 2018. Now situated in London Bridge, our latest taproom is at the front of our main brewery. Sake lovers and newcomers alike can enjoy a slice of Japan in our very own home of sake in London.

26/4/2021. Can sample courtesy of danlo, cheers Ed! Pours lively very pale yellow gold with a short lasting frothy white head. Aroma of lemon yuzu, cucumber, gherkin. Medium sweetness, light bitterness. Moderate body, oily texture, sparkling carbonation. Certainly not a sake as I know it, but there was something quite appealing about this.

13/4/2021. Can sample courtesy of danlo, cheers Ed! Pours fizzy, with a large short lasting white head, settling a slightly hazy pale gold. Aroma of musty apple, rice water, peppery spice, green \"wasabi\" paste. Moderate sweetness, bitterness builds. Watery texture, carbonation starts high but drops. Not bad, but not something I'd look to fins again.

250ml can. Clear, very pale yellow colour, short-lived thin white foam head and aroma of cucumber, dill pickle, yuzu citrus hint. Taste is sweetish, rice hints, with cucumber, vegetal, plus some citric yuzu notes. Watery, light bodied, light carbonation, dry cucumber & yuzu finish. Strange combination, but quite liked the cucumber flavours!

Very lightly hazed pale golden yellow with a white cap that dissipates edgeward.
Nose is grains, herb, damp grass, light white peppery spice, apple skins.
Taste comprises sweet apple pulp ... very different from what I was expecting with the aroma, sugars, grains, light spice, real apple kiss.
Medium bodied, moderate carbonation, semi drying close.
Pleasant enough sipper with a good apple profile.

Panda 🐼 at home thanks to Wingmane. A light hazed pale yellow straw coloured pour with a fine white head. Aroma is damp grains, white grape, straw, rice flour, little musty. Flavour is composed of medium sweet, apple, apple straddle, white grape, light tang. apple juice. Pretty smooth. Palate is semi sweet, fine carbonation, flour. Nice.

250ml can from Hop Burns & Black. Pale yellow gold colour, short-lived white bubbly foam head and aroma of green apple, peppery. Taste is sweetish, rice, apple, with fleshy, fruity, green apple hints and a peppery wasabi note. Light bodied, fine carbonation, dry finish. Quite OK

6/10/2020. Sample courtesy of danlo, cheers Ed! Pours almost clear with a very pale golden tint and a quickly dissipating bubbly head. Aroma of the day before’s rice, fragrant flowers, plasticky leather and a little singed hair. Medium milky sweetness and slight bitter edge. Moderate body, creamy texture, no carbonation. Increasing bitter finish. Not bad but not my favourite sake.

375ml bottle. Hazy pale yellow colour, no head and aroma of rice, melon, fruity, earthy. Taste is rice, tangy, leathery, earthy, mellow, boozy. Medium bodied, low carbonation, dry boozy finish. Nicely drinkable.

Sample thanks to Danlo: Poured a clear with no head. Aroma is very alcohol, fruity. Taste is fruity, some tanginess, very boozy, burn finish.

29/4/2020. Sample courtesy of danlo, cheers Ed! Pours clear and colourless with minimal head. Aroma is quite tangy and boozy, fruity and floral, and a little perfumed. Medium sweetness. Moderate body, bit sticky. Tasty, much more so than many other Sake I've had. Liked this one.
