Welcome to the sake revolution! Brewed like a beer, enjoyed like a wine. Kanpai means“cheers”in Japanese. KANPAI sake is naturally low in sugar, gluten-free, sulphite-free, preservative-free and vegan.
The pioneers of British sake, founded in 2016, KANPAI is the UK’s first sake brewery. We craft award-winning modern British sake, using traditional Japanese ingredients and techniques. We take a zero-compromise approach to our ingredient sourcing and a patient approach to our low-temperature extended brewing methods.
KANPAI is experimental at heart and ongoing exploration forms a huge part of our motivation to brew sake - we launch one-off limited edition and seasonal styles, alongside our core range sakes. Our sake is crafted by us, for you; using the very best ingredients, custom equipment and love. All KANPAI sake is made from start to finish on site in our London Bridge brewery. We even hand fill and label every bottle ourselves to ensure the highest quality.
Above all, good sake deserves to be enjoyed amongst old friends and new! For this exact reason we were inspired to create the first sake taproom in Europe - originally opened in 2018. Now situated in London Bridge, our latest taproom is at the front of our main brewery. Sake lovers and newcomers alike can enjoy a slice of Japan in our very own home of sake in London.

Tap at kanpai London bermondsey. A light hazed peachy petrol coloured pour with a loose white head. Aroma is soft peach, oily, jasmine, Turkish delight, white sugar. Flavour is composed of soft grains, Turkish delight, parafin, waxy notes, alcohol, petal,. Palate is dry, oily, mellow carbonation. Not sure why I came here.

Tap at kanpai London bermondsey. A clear petrol coloured pour with no head. Aroma is salty, funky. Alcohol. Miso, raw alcohol. Flavour is composed of salty miso, umami, prune, Warming alcohol. Palate is semi sweet, oily, no carbonation. Quite interesting.

200ml can. Clear orange-brown. Aroma of ripe plum, rice. Taste is mostly the plums, the hops are very subtle with a very mild herbal/piney note, retains its sake character, rice, melon notes. Light bodied.

Slightly cloudy, slightly yellow pour with a tiny white head. Aroma is mainly cucumber and yuzu/lemon (as expected). Taste is white bread/grain, rice, cucumber, citrus. Not bad.

375ml bottle. Bottled January 2022. Mostly clear pour with a subtle milky haze/tint to it. Aroma of herbal/floral hop notes, slightly perfumed, woody/earthy hints. Taste is herbal, floral hoppy, mild citrus, a slightly earthy/woody note, very dry. Nice one.

Clear. Alcohol noticeable on the aroma, less so in the taste. Dryish, with some nut, vanilla, cream and chalk followed by a umami soy sauce taste. Intriguing and enjoyable whilst drinking but left an odd and slightly unpleasant aftertaste.

Bottle at mikaku. Pours hazy cream yellow with dry ice, nose is funk, citrus, mushroom, taste is woody, zesty citrus, sweet, smoky.

26/4/2021. Can sample courtesy of danlo, cheers Ed! Pours lively very pale yellow gold with a short lasting frothy white head. Aroma of lemon yuzu, cucumber, gherkin. Medium sweetness, light bitterness. Moderate body, oily texture, sparkling carbonation. Certainly not a sake as I know it, but there was something quite appealing about this.
