Welcome to the sake revolution! Brewed like a beer, enjoyed like a wine. Kanpai means“cheers”in Japanese. KANPAI sake is naturally low in sugar, gluten-free, sulphite-free, preservative-free and vegan.
The pioneers of British sake, founded in 2016, KANPAI is the UK’s first sake brewery. We craft award-winning modern British sake, using traditional Japanese ingredients and techniques. We take a zero-compromise approach to our ingredient sourcing and a patient approach to our low-temperature extended brewing methods.
KANPAI is experimental at heart and ongoing exploration forms a huge part of our motivation to brew sake - we launch one-off limited edition and seasonal styles, alongside our core range sakes. Our sake is crafted by us, for you; using the very best ingredients, custom equipment and love. All KANPAI sake is made from start to finish on site in our London Bridge brewery. We even hand fill and label every bottle ourselves to ensure the highest quality.
Above all, good sake deserves to be enjoyed amongst old friends and new! For this exact reason we were inspired to create the first sake taproom in Europe - originally opened in 2018. Now situated in London Bridge, our latest taproom is at the front of our main brewery. Sake lovers and newcomers alike can enjoy a slice of Japan in our very own home of sake in London.

375ml bottle from Master of Malt. Clear, very pale yellow colour, no head and aroma of rice, fruity. Taste is sweetish, rice, fruity, custardy, with some spicy boozy notes. Oily mouthfeel, medium bodied, low carbonation, fruity boozy finish. Quite drinkable.

27/3/2020. Bottle sample courtesy of danlo, cheers Ed! Pours slightly hazy almost colourless. Aroma is sweet, floral, rice water, light hop and perfumed and herbal notes. Moderate sweetness. Slight corn and vanilla to finish. Not bad.

375ml bottle. Hazy pale yellowish colour, very fizzy short-lived white foam head and aroma of rice, fruity, herby hop. Taste is rice, woody herby earthy and boozy. Light to medium bodied, very spritzy carbonation, earthy mushroomy hop finish. OK

330ml bottle from Hop Burns & Black. 14.6%. Batch #4. Cloudy pale yellow white colour, no head and aroma of rice, fruity. Taste is spicy, rice, fruity, milky, boozy, peppery. Oily mouthfeel, medium bodied, low carbonation, dry peppery warm boozy finish. Quite sippable.

18/1/2019. Bottle from Bottle Shop Heroes, Wood Green. Pours a cloudy/milky off-whitish pale grey colour with no head. Aroma of green apples, chalk, rice water and cardboard. Moderate sweetness, sharp bitterness. Moderate body, slight watery texture, flat carbonation. Biting bitterness develops with some spice/heat. Aromas quite nice, otherwise not much of a fan.

7/7/2018. Bottle from Bottle Shop Heroes, Wood Green. This one is Junmai #3, bottled August 2017, 14% abv. A variant of the original entry rather than needing a new entry I'd say. Pours clear, virtually colourless with just the slightest yellow tint, and no head. Aroma of rice, green melon, slight peppery and spicy notes. Moderate sweetness, minimal bitterness, hint of sour. Moderate body, oily texture, very soft to flat carbonation. Had a light coconut milk finish developing. Quite taken by this one.

Bottle shared at Leighton's place 03/02/2018. Thanks to Paul! A milky greeny greyish coloured pour with a halo of fading head. Aroma is waxy paper, solvent, wallpaper paste, flaked rice. Flavoiur is composed of grainy, milky rice, solvent, hot alcohol, wallpaper paste, solvent. Palate is grainy, tangy, lowish carbonation, not a fan.
