Bays Brewery began in March 2007 when Will Freeland, Mark Salmon and Peter Salmon joined forces and signed a lease on an old 5000 square foot steel fabrication unit in Paignton. The transformation began towards the end of March and by the middle of June, after some considerable construction and installation works, it was running its first brew through the 20 barrel brew plant.
With Will Freeland’s experience as the head brewer at Skinners Brewery in Truro for ten years, Bays Brewery was quickly able to establish an efficient and consistent brewing regime.

Half-pint, cask ale as Pure Gold, 4.3 % abv, at George’s Meeting House (JDW). Off-white bubbly head, clingy lacing, amber coloured body, near-clear. Brown malty nose with citric notes. Taste of dried fruits, lemon and toffee. Bittersweet end. Straightforward (Exeter 29.09.2016).

Gravicask at Plymouth CAMRA Beer Festival 2016, shared with Finn. Clear golden, spotty lacing. Grassy hops and bread on the nose. Some impact of apricot, brown malts and grass to the taste buds. Mild bitter endnotes. Decent (23.09.2016).

Half, cask at Union Rooms. Creamy, beige head blanketing the glass. Near clear amber body. Toffee and dough on the nose. Mid-sweet malty flavours, hints of bread, caramel and dough. More sweet than bitter to the finish. Smooth in the mouth. Easy going. (Plymouth 23.09.2016).

Cask @ Bridge Bier Huis, Burnley. Paler golden coloured cider. It’s quite stated in its apple flavour, notably in its lingering aftertaste, with a sticky-sweet texture. Much less stated in its aroma.

Bottle at home, 28/07/16. Clear golden with a decent off White head that dissipates to a swirl. Nose is light caramel, sweet malt, toasted grain, faint citric rinds, floral notes. Taste comprises vanilla essence, straw, toasted grain, light caramel, bread. Mediterranean bodied, fine carbonation, semi drying close. Decent for style.

Bottle from Crocombe’s, Lynmouth. Pale golden with a small carbonation and next to no head. Fairly ordinary lager which is continental in style, there’s nothing ale-like from this mainly ale producing brewery.

Cask at Angleterre, Helsinki. Colour is dark copper with small bubbly white head. Aromas and flavors: Nuts, dry fruits and malts. Basic bitter.

Cask at the Foresters, Aberdour. Pours clear golden with a thin white head. Aromas of caramel, light hops. Taste is light bitter, good texture and a creamy finish.
