WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Draft at the source and multiple cans. Pours a thick, juicy gold with a finger of creamy foam that lingers. Lots of fresh cut strawberry aromas with cream and faint citrus. Smooth and velvety on the palate. Rich and creamy, like a fresh mango juice-like texture. Strawberries and cream on the palate. Some citrus as it warms. Low acidity. Refrigerated 16 oz. aluminum can poured into a glass. Cloudy orange with small white head. Aroma is herbal hops, medium body, medium carbonation, and pretty good big-bubble lacing. Taste is citrus hops, herbal hops, and some bitter hop finish. Pretty good juice.

Draft at the source. Pours a thick and fudgey looking brown with a finger of creamy caramelized beige head that lingers then dissipates. Coffee, toasted caramel, treacle-forward nose. Lots of milk chocolate as it warms, vanilla in there as well. The palate is excellent, all creamy coffee chocolate pudding through and through. Rich, thick and full-bodied. More liquid fudge, milk chocolate with light vanilla, caramel and roasty coffee. Everything comes together and like a nice machiato the sweetness is balanced out by roasty bitterness. The best stout I've had from BI.

An improvement over the last edition, but still a frustrating, unfinished IPA, with a fresh, juicy burst of hop goodness on the front and next to nothing on the finish. Lemondrop, grapefruit, tangerine, and peach notes make a strong first impression, but the malts never show up, and the back end offers up slight notes of pine and bready yeast and precious little else. Pours a watery hazed gold with a brief white head and no lace. Nose offers wet malt and citrus. Undercarbonated, thin texture doesn't help. Eh.

Draft at SG 2 Year Anniversary Party. Pours a hazy, glowing gold with a finger of white foam that lingers. Lots of green pineapple, guava and citrus zest in the nose. Dry on the palate, with some hopburn alongside green pineapple and papaya. Dry finish with some pithy bitterness and some matcha character.
