Description
WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Thanks Stephen for the can! Poured into a snifter showing turbid lightly whitish yellow with sparse white foam. The nose shows pronounced notes of guava and papaya. The palate is medium bodied and well carbonated. Pronounced papaya forward flavours on the front end warming into guava and a lightly sharp pine resin bitterness on the finish.

Another good IPA from Bearded Iris, a nice mix of citrus and berry and dank with a wafer-thin malt profile and a modest bitter finish. Lemondrops, pineapple, tart berry and Mosaic soapiness lead the way, with a cracker-ish malt undertone providing the slightest inkling of sweetness to pad the hops. Back end drops off rather abruptly, the fruitiness switching gears to a mild herbaceous streak laced with pine and skunky weed. Massive fruit salad aroma, but the pour's fair-to-middlin', coming out a ultra-hazy gold with barely any head and no lacing. Perfect texture, oily but with enough spark to keep from growing clingy. About as Bearded Iris as a Bearded Iris IPA can get.

Tall can. Slightly hazy yellow with a white head. The aroma has some funky decaying citrus, light spicy anise, vanilla. The flavor is light and fruity with a small bite of tartness in the finish.

Pours from the can a cloudy yellow-orange color with a medium white head that diminishes gradually to a wispy film. Short strings of lacing. Aroma of tropical fruit, piney hops and malt. Medium body with flavors of grapefruit, melon, resiny hops and malt. The finish is moderately bitter with a fruity hop aftertaste. Pretty good overall.

Surprisingly not very Bearded Iris-like for a dry-hopped saison from the brewery. Stays very close to a traditional farmhouse ale, grassy and mellow and sweet, clove and wheat and vanilla offset by lemondrops and yeast, followed by a modest bitterness on the finish. Hints of pepper, hay, and spice draw out the fade. Not sure what the dry-hopping adds, since Entangled ends up a pretty spot-on classic saison, albeit a well-made one. Pretty good nose, hints of wheat and cereal and clove but watered down. Pretty pour, though, coming out a hazed yellow with a mild head and some lacing. Texture is sparkly but a bit weak. A good saison anyway,
