WHEN YOU SIT DOWN WITH A BEER, YOU’RE AFTER SOMETHING. Maybe it’s nuanced layers of flavor, the siren call of a favorite hop, or to test your skill identifying stone fruit tasting notes. Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Draft at the source. Pours a hazy orange, gold color with a firm inch head of foam that dissipates. Crushed pineapple, durian and coconut aromas. Great prickly pineapple tartness and hop goodness in the palate. Grassy and fruity. Whoa, seriously good stuff.

Batch 2 can brewed March 2018. Pours a hazy gold with a tight finger of foam that lingers. Great lacing. Huge dank nose with peach, lychee orange and crushed pineapple. Smooth with a tingly, prickly bitterness on the finish. Booze is hidden very well. Great batch and a big improvement over batch 1. Draft at the source. Pours a hazy gold with a finger of foam that lingers. Peach, lychee and durian dominate. Hop bazooka nose. Lots of white peach on the palate, tropical fruit. Dank as it warms. There is a tad too much alcohol that shows up in the finish. Other than that a nice drop.

Modest drop-off from regular Ever Clever. Still has the lovely citric-tropical hops tinged with caramel sweetness, but the dry-hopping brings out a stronger black and green pepper spiciness that doesn't mesh well with the unexpectedly astringent finish. Some piney and clingy IBUs on the back end, along with copious notes of lemondrops, orange, pineapple, and dank weed, but the fade is boozy and raw, not altogether enjoyable. Pours hazy as hell with a slight white head and ample lacing. Nose hints at the outsized alcohol presence. Tasty, but not nearly as drinkable as the original.

Can from Craft Brewed. Pours a hazy gold with a finger of foam that lingers before dissipating. Lots of peach and mango in the nose. Juicy creamy milkshake texture. Fruit all the way throughout w/ a prickly bitter finish that lingers. The only thing that is off is the slight boozy finish. Pounder: Pine needle, pineapple, thistle nose, sharp. Opaque amber, thin head. Fairly dry grapefruit. Medium body, easy but prickly carbonation. Wonderful aroma, but perhaps overattenuated, one note.

Can from Craft Brewed. Pours a milky looking straw color with a full 2 fingers of foam that dissipate quickly. Lots of pear, clove and star anise in the nose with green pineapple, papaya and apple coming out as it warms. Good Belgian yeast character as well. Body is a touch too rich and oily for saison though. Slightly too well-rounded. Missing that crisp and clean carbonation and mouthfeel. Lemon custard on the finish with some prickly peppercorn character and lingering hoppy bitterness. Well-done, but different for the style for sure. Still I think a lot of people will be like "Bearded Iris should stay in their lane" or whatever, but still this is a solid take on a saison that tries to keep what Bearded Iris does well in play.

Can from Craft Brewed. Pours a super hazy / turbid gold with some greenish highlights. 1 - 2 fingers of creamy foam that lingers. Huge dank nose with pineapple, white grapefruit and some catpiss. Multiple cans from Craft Brewed. Pours a clearish gold with a finger of foam that lingers then dissipates. Tons of peach, apricot and tangerine. Mango and pineapple. Light dankness. So much fruit, no bitterness really. Fruity and sweet on the palate, honey, some floral notes. Smooth finish. Creamy body. Can from Craft Brewed. Pours a hazyish, deep gold with a finger of foam. Another hit from BI. Peach, honey and melon nose. Creamy palate, medium bitterness. Grass and honey with mango and peach. Light zesty finish with some faint pithy bitterness that lingers.
