Picture yourself eating a handful of red raspberries, drinking a glass of fresh squeezed lemonade, or sipping on a glass of fine wine. Those sour, tart, and acidic flavors you are currently imagining are what makes sour beer taste quite different from traditional beers. These flavors, which are unique to sour beers, are the product of time and the right mix of microorganisms. While our sour beers age in oak barrels for an average of one year, a blend of microorganisms will shape the sour, tart, and acidic flavors that we’ve come to desire. Yes, sour beers take an exceptionally long time to develop, but we think that sour beers are well worth the wait.

Waxed up 750. Fun beer. Kind of waxy jam, can’t tell its strawberry. Very fruit pit aroma. Flavor is just slightly tart, heavy body with jammy essence. Light tart aftertaste.

Draft. Amber beer with a ream head. Tropical fruit and citrus aroma with light tartness. Tart and light sourness lingers with tropical fruit. Medium bodied. Tropical fruit and tartness lingers with light earth and light grapefruit.

Draft. Amber-brown beer with a tan head. Tart and light funky aroma with dusty raspberries. Raspbeery and tart/light sour flavor. Medium bodied. Raspberry lingers with tartness/light sourness and light acetic notes.

Bottle at De Garde. Pours a bright yellow color with a medium white head. A big fruity nose, funky, oak. Lots of citrus elements that are really ginger. The flavor is an oaky sour base with robust ginger, something seemed smoky to me almost. Quite interesting.

Growler. Pours a hazy gold with small off white head. The aroma is earthy hop with pine and grass and some oak. Thin mouth with nice stone fruit and citrus, light oak, nice sourness, really enjoyed this one.

Bottle thanks to William. Pours a cloudy copper orange with small frothy off white head. The aroma is citrus and oak. Thin mouthfeel with nice sour fruit, stone fruit, cherry skin, light oak, very nice.
