Picture yourself eating a handful of red raspberries, drinking a glass of fresh squeezed lemonade, or sipping on a glass of fine wine. Those sour, tart, and acidic flavors you are currently imagining are what makes sour beer taste quite different from traditional beers. These flavors, which are unique to sour beers, are the product of time and the right mix of microorganisms. While our sour beers age in oak barrels for an average of one year, a blend of microorganisms will shape the sour, tart, and acidic flavors that we’ve come to desire. Yes, sour beers take an exceptionally long time to develop, but we think that sour beers are well worth the wait.

Tap. Pours cloudy magenta, medium bubbly pink head, some lacing. Aroma is light fruity, oak, basement. Flavor has lots of berries, boisenberry jam. Light tart, some oak, very light funk, stems. Medium body, low carbonation. Quite interesting!

Tap. Pours clear ruddy amber, tiny bubbly head, little lacing. Aroma is tart cherry, oak tannins, vanilla, a but of funk. Flavor is medium tart, cherries, oak. Medium body, flat as a board.

Poured from a 750 ml bottle. Aroma has a light acidity with quite a bit of cinnamon. Light vanilla notes and faint peach with light tropical fruit. Reminds me of a fruity snickerdoodle cookie. Pours a cloudy, bright, yellow gold with a small white head that recedes quickly to the edges where it lingers. Light lacing and small legs. Flavor has a medium light acidity. Some more peach character than in the aroma. Less cinnamon, but still quite a bit. Rather faint vanilla. Some medium light citrus notes with some light tropical fruit. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice beer but the cinnamon character is a bit strong. Lots of tropical fruit but not much peach. Almost no vanilla at all.

Notes from Sour & Bitter Festival at The Trappist. Aroma is super hop forward with a ton of tropical fruit - pineapple, mango, guava and melon are all rather prevalent. Some medium light citrus and light acidic notes. Brett seems to accentuate the pineapple and tropical fruit notes. Pours a cloudy, pale yellow gold with a thin white head that displays good retention and lacing. Faint legs. Flavor has a lot of pineapple and guava fruit notes with some generic tropical fruit character as well. medium light acidity and medium light citrus notes. Low bitterness with low oak and oak tannins, Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a really nice hoppy sour beer and definitely my favorite offering from the Rare Barrel so far. Kegs seem to have some variation as my friend who was there said this keg was much better than the previous pour he had of this beer elsewhere. So much tropical fruit.

Bottle thanks to Chow. Pours a cloudy yellow with small off white head. The aroma is strong ginger, oak, and lemon zest. Thin mouthfeel with tart ginger and oak with lingering sourness. Very nice

750 mL bottle shared by OldSock at the DC Summer Saison & Sour Tasting, 7/12/14. Pours a hazy copper color with a thin head. Fair head retention. Aroma of tart sour berries, peppery funk, jammy fruits. The taste is tart jammy fruits, mild vegetal notes. Medium bodied.
