Bottled November 2016, drunk 3/17/17 at Haymaker.
Good clarity with just a light haze to it and a deep, golden-brass hue. White head atop is large and shows moderate to moderately-strong retention.
The nose smells like Hill Farmstead; it has that tell tale bacterial character producing lots of lactic acid with a lovely minerality and mild, fruity, leathery-at-times Brett character. Big fruity esters provide lots of yellow fruit with light spongecake, vanilla and moderate cereal character behind it, from the grains. Very rustic and aromatic and as it breathes the lactic acidity folds in to the beer much more, providing a homogenous character. Don’t get as much black pepper that I usually get from fermented honey, but that’s quite alright. No alcohol or flaw.
In the mouth it’s dry, well-attenuated with a malty texture and engaging, natural carbonation. Tartness from the bacteria and Brett mix with strong cereal-like suggestions from the grain. The finish has a bit of a twangy, bready, somewhat sharp character that builds up more and more as the beer progresses until by the end I’m actively annoyed with it. A little more malt depth and even sweetness here, with less twangy acidity, would go a long way.

Pours clear straw into a tulip. Bright white head with good retention recedes leaving spider lacing. Funky lemon aromas. Medium bodied but sharp with dough and biscuit upfront turning to tart lemon chiffon before the lasting bitter earth finish.

Really is very good for a pilsener, but it’s still a pilsener people. Hits the drinkability scale on extra like Seinfeld. Golden pour. Crisp finish with decent bitterness. Tap at Churchkey.
