Description
It had always been an ambition of Tom Minshull to start a brewery, having been involved a while back with Burt's Brewery due to its links with his company, Island Ales. Tom was only prepared to start this venture when the time was right and only if it was done properly and with attention to detail and above all, to be able to produce a first class product.
When Chris Coleman agreed to come on board as the brewer, the ability to produce a first class product was in place. Chris brings a wealth of experience, expertise and respect, which has been gained over many years as a brewer of some distinction.
Following extensive research and site visits to mainland breweries by Steve Minshull and Chris Coleman it was decided not to use second hand equipment but to use a company called Johnson Engineering, a company specialising in brewery manufacture based in Bolton, Lancashire, to make for us a brewery to our specifications.

Cask - Pale and lightly sweet malts. Clear gold with a thin head. Pale light sweet malts and crisp light bitter finish.

Cask - Twig and some sulphur with toffee. Clear copper with a decent white head. Light toffee and twig. Smell is a bit off.

Cask via the Fisherman’s Cottage during the IoW Jolly. It pours clear deep amber with a decent off-white head. The nose is brown bread, brown sugar, caramel, fruit cake and toasty grain. The taste is bitter-sweet, woody, leather, varnish, earth, dried fruits, biscuit and some toffee. Solid ESB action.

Cask at the the Waterfront Inn, Shanklin during the IoW Jolly. It pours clear amber with a medium white head. The nose is a bit eggy, sulfurous, mushroom and toasty grain. The taste is lightly bitter, toasty, grainy, brown bread, light caramel and some of that eggy notes. Medium body and fine carbonation. Dodgy eggy bitter.

500ml Bottle - Golden with a white head. Apple, yeast and malt in the aroma. Fruity and moderately bitter taste with yeast, lemon and a hint of banana.

Sampled @ GBBF. Clear golden color, average sized white head. Smell and taste lightly malts, a bit grainy, decently bitter. Not very special but a decent beer. Average body and carbonation.

Cask at GBBF ’14, day 4, 15/08/14. Clear golden amber with a well appointed off white cap that retains. Nose is bready, fruit, grain. Taste comprises malty notes, bread dough, light citric fruit. Medium bodied, moderate carbonation, semi drying close. So so, a little muted and expressionless.

Cask (Newport Ale House, Newport) - Golden in colour. Biscuity malt and a hint of citrus in the aroma. Moderately bitter taste with grain, biscuity malt and lemon detected. Drinkable, but notihng outstanding.
