Description
he Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

(Draft at Beer Temple, Amsterdam, 17 Aug 2025) Golden colour with frothy, white head. Fruity nose with citrus, green grapes, white wine, oak wood and funky yeast. Fruity, tart taste with notes of citrus, grapes, peaches, lemon, oak wood and hints of yeast. Hardly any bitterness. More than medium body, dry. Fresh, dry and funky, with a good grape presence. Very nice.

750ml bottle pours a murky purple with some pink head.  Nose has a lot.  It has raspberry, but huge berry patch.  Like the soil and green leaves of the patch.  Something plasticky though.  Like garden hose.  Flavor has raspberry and cherry, some malt, lots of oak and wood.  Bone dry.  Like dead dry.  Huge minerality too.  8 8 8.5 9 8

Pours murky orange with no head. Aroma: tart, wood barrels, yeast and red fruits. Taste: intense tart and dry. Yeasty tart palate.

Bottle pour shared by ClarkVV--thanks, Clark! Hazy, golden yellow, with ring of head no lacing. Aroma is strong funk, tart fruit, wheat, oak, white wine. Taste mirrors aroma with tart fruit stronger than funk. Soft carbonation, finish as taste. Good strength, complexity and balance. Very nice!

1.5 liter magnum. Aroma has mild fecal matter, oak, old wheat. Lots of bacteria in here. Mildly tart, softly sour, light barn yard. Light acid. Great palate change up

1.5L bottle drunk 8/9/25.
Clear brass, minimal carbonation.
Smells funky, lambicy, soft and round with lots of fruity, juicy, lightly vanilla-like oak. Really clear and bright aroma with stone fruit, unripe tropical fruit.
Stone fruit, chewy wheat and big, fruity notes with light honey and mildly tart acids. Good homogeneity and a refreshing zestiness. Very approachable and still flavorful and kickin' at 8 years of age. Feels like you could age this another 10 years easily.
