750 ml bottle into snifter; Batch #1, bottled in Fall 2014. Pours nearly pitch black color with a 1-2 finger fairly dense tan head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big dark chocolate, cocoa, coffee, caramel, toffee, toast, dark bread, molasses, raisin, plum, fig, date, light licorice, herbal, floral, light smoke/char, and yeast/roasted earthiness. Damn nice aromas with great complexity and balance of dark/roast/bready malt, and moderate fruity yeast/earthy hop notes; with good strength. Taste of big dark chocolate, cocoa, coffee, caramel, toffee, toast, dark bread, molasses, raisin, plum, fig, date, light licorice, light smoke/char, herbal, floral, and yeast/roasted earthiness. Fair amount of herbal/roasted bitterness on the finish; with lingering notes of dark chocolate, cocoa, coffee, caramel, toffee, toast, dark bread, molasses, raisin, plum, light smoke/char, and yeast/roasted earthiness on the finish for a while. Incredible complexity, robustness, and balance of dark/roast/bready malt and moderate fruity yeast/earthy hop flavors; with a great roasted bitterness/sweetness balance and zero cloying flavors after the finish. Light carbonation and fairly full bodied; with a very smooth, creamy, moderately silky, and lightly slick/sticky/chalky mouthfeel that is great. Alcohol is very well hidden with only a light warmth lingering after the finish. Overall this is an incredible Russian imperial stout style. All around awesome complexity, robustness, and balance of dark/roast/bready malt and moderate fruity yeast/earthy hop flavors; and very smooth to sip on for the huge ABV. A highly enjoyable offering.

Draught at Row 34, 9/10/15.
Not sure what’s going on with the availability of the beer...the website claims that after waiting 30 months, the pre-release of one keg would debut on 9/10/15 at Row 34 (it did) and bottles would be sold on 9/24. Yet there are already 18 ratings....so...ya. Anyways, it’s a golden, lightly hazy liquid with light carbonation, a touch of amber coloring and a small white head that slowly recedes to a ring.
The nose, coincidentally enough, just like the Sour Opal I had the night before here, is wonderfully redolent of a true lambic, showing minimal but apparent oakiness and a great deal of harmony amongst the bacterias and yeasts. Funk for days, with plenty of lactic softness/cheesiness and a good deal of fruitiness from the brett. Neither this nor Sour Opal had any sulfur character to them (Booooo!!!). Free from alcohol and flaw.
Moving on to the ever-important flavor, I’m pleasantly surprised by the body on this thing as well as the sour, but not-too-sour bacteria profile. Very brett-driven, seemingly lambicus, as it’s strong and very given to the band-aid aspect. A fleeting touch of acetone; just a glimpse is the only detractor I find in the beer’s flavor, though the band-aid-like leatheriness and dry limeskin character is taken quite far, as well (which I don’t mind, but I could imagine a lot of people minding). The interesting thing about the beer, to me, was the very supple, malty body. Either they’re off on the abv calculation or (more likely) they’ve blended a very young beer with a number of old ones. Which, as we all know, is the traditional practice. It works here, though it comes off just a touch disjointed and perhaps a bit too sweet overall. Probably another 3-6 months would help with the cohesion/homogenity, but then, this is a brand new beer, and I would imagine you’d want to bottle the beer in this state, so that it can develop and age like a real lambic.
What’s amazing to me is how the young bottles of the best lambic producers in Belgium can come off as already mature and developed and yet age gracefully for so many years....which has nothing to do with Flor Ventus. Anyways, I’d chalk this one up as a grand success and a great way to celebrate the imminent grand changes happening at the (soon to be a) brewery.

750mL bottle, Batch 1 printed on the side, drunk 9/4/15.
Huge tan head tops an inky black body. Great retention, indeterminable clarity.
Big baker’s chocolate and fudge notes in the nose signify this is going to be a big Imperial Stout....vanilla, prunes, tons of cocoa and rich caramel all certainly coat the nostrils and alcohol seems pretty well concealed. Didn’t know what to expect with this one, but I didn’t think it was going to be just a massive malt monster with little else. The oak is very slightly noticeable. Enough to add some toasted/charred notes, a bit of vanilla and light wood, but otherwise fully enveloped by the malt.
Punishingly sweet in the mouth, it’s massively underfermented and the epitome of a cloying, syrupy-sweet Imperial. Gooey, cakey fudge, milk chocolate and vanilla notes all bludgeon the palate while some toasted oak, prunes and oily roast notes do eventually emerge. But it’s much, much too little to balance and the beer is just a heavy-handed, brutish mess. Dumped the whole thing down the drain after a few sips.

Draught at Deep Ellum, 9/4/15.
Love how 13 people in Denmark rated one bottle...Let’s see, minus headspace/sediment/dregs, that’s about just over 1.5 ounces per person, assuming no other people drank from the bottle. "But you can definitely get a full impression from a beer after just 1.5 ounces!" Bullshit. You’re just justifying being a ratings whore, so just tell it like it is. It’s laughably ridiculous, but anyways, moving on....
Lovely golden body is hazy and topped by a small, white head that recedes fully.
Delicious brett in the nose is very aromatic and quite fruity with less of the band-aid/plastics notes and concentrating more on the easygoing citrus/limeskin and soft funk.
Very flavorful with a solid, malty body, yet not too sweet. Good acidity leading to a tart finish, with light vanilla, very light oak and a touch of acetic/lactic acid. More brett saison than than generic American Wild Ale, as there is actual malt and saccharomyces character here as well. Soft to oily texture, ample, tight carbonation and on alcohol or flaws. Still a bit big and brash (not obnoxiously so, or anything, just could use another 6 months or so).

750 ml bottle, purchased at Kappy’s liqueurs Danvers. Ok, bottle date of 12-11-14. I guess this was hidden in the back room someplace because I was at this Kappy’s only a month ago and it wasn’t on the shelf. Anyhow... Slight hazy gold without any head. Aroma is pale grain, old fruit and slightly sour wheat.

This displays a huge sweetness, honey, caramel and sweet grain and corn like hints. The mouthfeel is nearly flat. For some reason it didn’t really carb up. The mouthfeel and sweetness doesn’t really work for me but is not undrinkable. Lightly cloying and really needs carbonation. Slightly below average.

750ml bottle. Cloudy golden colour with average to huge, frothy, half-way lasting, minimally lacing, white head. Fruity, yeasty aroma, notes of apples and pear, a herbal touch, grassy hoppy overtones. Taste is slightly peppery spicy yeasty, fruity, malty, hints of apple and pear, grassy hoppy overtones. Not of the excessively sophisticated kind.
