(Draft at Moeder Lambic Fontainas, Brussels, 20 Sep 2025) Pale amber colour with frothy, white head. Fruity nose with apples, apple skin, citrus and floral aromas. Fruity, tart taste with notes of apples, citrus, mandarin and a generous acidity in the finish. Medium body, dry. Clean, dry and elegant, with a good acidity. Very nice.

(Bottle, vintage 2018) Golden amber colour, hazy, with brief off-white head. Fruity nose with notes of apples, oak wood, apricots, orange, spices and a touch of marzipan. Fruity taste with apples, oak wood, apricot marmalade, orange, marzipan, spices and a finish with hints of tannins and a generous acidity. Medium body, with a slight sweetness. Elegant and harmonious cider, with a good barrel aged character. Very nice.

Bottle shared. Slight hazy dark golden with small head. Sweet apple, dry oak, peach, barnyard funk, indeed some boozy calvados, vanilla, caramel, dry apple peel. Medium sweet, light bitter. Over medium bodied. Good!

Clear gold orange cider, small creamy white head, unstable, non adhesive. Aroma: apple juice, a bit floral, some caramel, a little yeasty. MF: ok carbon, medium body. Taste: dry, spicy, some tannins, apple skin, floral touch. Aftertaste: spicy, pretty dry, earthy, tannins, apple skin, soft acidic, apples, nice one, dry finish, love it!

Clear gold blond to orange cider, no head. Aroma: apples, a little funky, earthy, some fungus, cellar, musty. MF: ok carbon, medium body. Taste: pretty fruity, lots of apples, juicy, sweet touch, nice acidity, a little bitter. Aftertaste: apples, dry, some tannins, a bit spicy, sweet apples, apple skin, decent, but a bit sweet for a brut maybe? I’ve had way dryer ciders than this one.

Bottle 'Cidre Nature Brut'. Clear dsrk golden. Crisp apples, ligt barnyard, peac, quite some leather, tree bark. Just medium sweet and lighter bitter. Solid medium bodied with quite some CO2, over medium dry.

Bottle shared. Almost clear golden. Crisp applez dry cellar, soft barnyard, green apple, gooseberries, unripe pear, star fruit, oak. Light sweet and sour. Over medium bodied and quite dry indeed. Lovely.
