Description
We think life’s too short not to enjoy what you do, so we decided to brew. First and foremost we brew beer for you to enjoy. But we also think the art and science of brewing is fascinating so we’re going to share that with you.
We’re interested in creating good chemistry in its broadest sense – not just in the quality of the beer we brew, but using that to allow us to celebrate community and relationships across science, the arts, music, food, and social experiences, as well as beer & brewing. We might be biased, but we think Bristol is one of the best cities in the UK, and we’ll shout about that as much as we can.
The brewery was started by Bob and Kelly in 2015, finding a home for the 10 barrel kit in St Philips in East Bristol.

Can from Hoptimism. Hazy pale golden colour with a white head. Aroma and taste are fresh and crisp light sweet citrus. Medium body.

Cask at Winter GBBF: Poured a brown with circle of off white. Aroma is roasted malts. Taste is chocolate and roasted malts.

Can picked up from Hoptimism website, Loughborough, Leicestershire UK and consumed at home Sunday 6th December 2020 listening to Kelly Stoltz - Ah. Cooking Oven-baked kale gnocchi with balsamic tomatoes. Pours hazy chestnut brown with a cappuccino coloured head. Plenty of caramel, fruity with a typical British earthy hoppiness, malty, jolly pleasant ESB.

Can. Favourite Beers, Cheltenham. Soft haze on a bright gold. Decent, shiny topped, white head. Nose has slightly rubbery yeast notes. Some wheat. Cereal. Hint of herbal hop. Taste has sweetness, initially, turning fairly dry, and lightly bitter. A tad flabby on the palate. Foamy carbonation. Light bitter finish. Ok.

Can. Favourite Beers, Cheltenham. Lightly hazy, medium gold. Nicely dense, white foam. Nose has light “Belgian” notes. Hint of fruit. Some bubblegum. Taste is semi dry. Some grain sweetness. Light body. Short finish. Boring, tbh.

Cask handpull at Famous Royal Navy Volunteer Bristol Clear deep chestnut colour lasting beige head. Nuts on the aroma . walnuts. hazelnut. earthy. ok condition .ok temperature. some bitterness. malty nutty interesting. plenty of character. some vegetal character. ok. oh yes once I got the vegetal flavour this went backwards.

On tap at Famous Royal Navy Volunteer Bristol Hazy amber colour lasting white head. light on the esters on the aroma. yes has some banana some lemon some caramel in mouth ok aroma a little subdued. same in mouth. not a big weizen. a small banana wheat beer. light. ok. as a light weizen it's fine. I prefer a bit more umph. a little watery too

Can. Favourite Beers, Cheltenham. Moderate haze on a medium gold. Well sticky, lasting, white foam. Nose has oats and sweet wheat. Orange peel. In fact it has a bit of Hefeweizen about it. Taste is pretty sweet, and milky. Medium body. Fine carbonation. Light bitterness to finish. Ok.

Cask handpull at Lime Kiln Bristol. Near black beer lasting tan head. Roasted aroma with light sour dark cherry aroma. it's like an old ale more than anything. good. hides abv well. the spur dark cherry flavour is lovely. good.
