Wild in character, a complex ale with dried fruit and clove aromas, and a satisfying dry finish. Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish.

Bottle pour into nonic pint glass from Redstone Liquors, Stoneham. Appearance is mostly clear light copper (fine white floaties), nice sparkle, ephemeral fizzy ring of off-white head. Aroma is light bubble gum, candied fruit, spice. Taste is candied fruit, light caramel, mild tart fruit, spice. Palate is light bodied with thin texture, soft-to-average carbonation and mix of sweet and tart fruity finish. Overall, a nice sweet, fruity beer with nice complexity from the spice and tart contributions. Brett complements but doesn't send over the tart edge.

Amber color with a slightly sweet aroma. The taste is spicy and a little bitter, but different than just hoppy bitterness.

12 oz bottle on 5th Jan 2018, poured into a La Chouffe stemmed tulip glass to make it feel at home (drank in California though). No sediment left the bottle, so I got a lovely clear amber bodied beer, thin white affair on top. Fairly sweet throughout with an aroma that suggests maltiness more than Belgian-ness. Taste also sweet and malty, malty molasses in fact rule the flavours. It's OK, but how it is currently a Top 50 Belgian Ale on RateBeer is beyond me; maybe some of the RateBeer guys need to actually visit Belgium before scoring this so highly; this wouldn't be in my top 100 Belgian Ales.

Bottle at home in Beer Hawk advent calendar. This was a revelation. A lovely yeasty aroma to the beer and a gorgeously layered flavour that included gently sour yeast and balanced hops. This was my type of sour; one that is integrated into the beer and resulted in a delicious and complex flavour. The taste changed as the beer warmed in the glass and meant that I got something new with each sip. The alcohol was well hidden and it is certain that this beer will only improve with age. A majestic beer.

From the bottle. Orange, hazy, with a white frothy crown. Aroma is yeasty and full of tangerine, spices. Taste is malty sweet, lots of caramel, turning dryer on the finish. Body is medium, sticky, carbonation is mild to moderate. Overall, very good. Usually I do not regret sharing the bottle but this one I wanted all for myself.
