750mL bottle, drunk 8/8/22. Mostly clear, leaving as much sediment behind as possible. Burgundy-mahogany with a slight ring of butter-tinged bubbles. Some light oxidation for sure, but doesn't seem gone. Definitely very sherry-like with raisin, red fruit and very easygoing sourness. At this point, if it ever was aggressively sour, it's mostly just tart, plummy, mineral-like and balanced red wine. No alcohol or flaw. Gets better and better with every passing minute (as it breathes). Grapes galore with great acidity but not sourness. Wonderful texture with well-attenuated malt. Just a plethora of barrel character. The red wine definitely the most prominent, but there's light whiskey-like dry spice and some grapeskin and alcohol-like grappa on the very end. This is absolutely insane at 18 years old. There's no overt oxidation and still it's vibrant with bright grape and tart yeast acidity. I'm guessing this needed at least 5 or so years to really loosen up and was still in its prime at 10. Even now this is a fantastically-balanced, flavorful beer that I'd gladly drink more of.

Tap at Beer Rev, Oakland. It pours a red grapefruit colour, with a thin bubbly off-white head. The nose is strawberry, cherry, green apple, malt vinegar, jam, lemon and wood. The taste is tart granny smith apple, white grape, lemon, cherry, strawberry, malt vinegar, lime pith and wood, with a juicy-tart finish. Medium body and low carbonation. Great balance. Absolutely delicious.

Draft. Copper colored beer with a low cream colored head. Tart/acetic/sour aroma with cherries. Acetic and malt flavor with cherries and some sourness. Medium bodied. Cherry and sour/acetic notes linger with earthiness and malt.

Säuerlich, durchaus malziger und trockene herber Antrunk, eher mild gehalten. Auch im weiteren Verlauf ist das Bier eher mild, die wichtige Säuerlichkeit ist auch in weiteren Teilen nicht ausreichend präsentiert. So süffig und malzig aber zu trocken, weiterhin spielt sich die Säuerlichkeit leider nicht im Vordergrund ab. Mildes aber süffig säuerliches Bier. 75 cL bottle, courtesy of Bov. Pours hazy to murky dark amber brown with a creamy, off-white and dense head. Aroma is fruity, wineous, slight acetone and citric. Smooth fruity, phenolic and vanilla wooden flavoured. Smooth lingering wineous notes mixed with light alcohol warmth and phenolic notes. Lingering fruity finish but certainly with an alcohol presence. Thanks Philippe for this great beer!

Dark brown color; thin collar. Very nice aroma, with a good mix of vanilla from the cask and the typical yeasty sourness from BFM. Good body structure, with malt and caramel flavor, some sweetness, with the medium BFM sourness and astringency, harsh but softened by the velvety vanilla notes from the cask; maybe the alcohol is too evident. A very good and complex beer. It was worth waiting a few years.

Bottled. A murky dark red-brown beer with a thin off-white head. The aroma is sweet and sour like a Flemmish sour ale with notes of berries, alcohol, and apples. The flavor is malty with notes of apples and berries, leading to a dry woodey end, and the body is thick. Interesting but a bit weird.

2004 bottle, 10%. Sour, sweet, vinouos aroma with earthy and woody notes. Cloudy dark red/brown colour. Very small light brown head. The flavour is sour, acidic, raisiny.
