Coquetier was brewed in April of 2014 with Hill Country well water, barley, rye, hops, cubeb peppercorns, anise seed, lemon zest, and lemon juice. It was initially fermented in stainless steel with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. It then spent seven months continuing to slowly ferment and mature in 600 liter French brandy barrels. It was then refermented in bottles, kegs, and casks for another three months prior to release. Coquetier is 7.5% alcohol by volume, has a finishing gravity of 1.005 (1 degree Plato), and was 11 IBU and 3.2 pH at the time of bottling. The label art was created by our in-house artist Josh Cockrell. Finally, the French brandy barrels, after first being used by us to impart spirit character into Coquetier, are now in our barrel room as neutral oak vessels containing 100% spontaneously fermented beer.

750 ml bottle into singature tulip glass; Blend #1, bottled 1/27/2015. Pours lightly hazy golden orange color with a 1-2 finger dense and rocky off white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart/sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, anise seed, hay, straw, floral, leather, oak, musty funk, cracker, bread, light white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and compexity of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt notes; with great strength. Taste of big tart/sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, anise seed, hay, straw, floral, leather, oak, musty funk, cracker, bread, light white vinegar, and yeast/oak earthiness. Good amount of fruity/acidic sourness and yeast spiciness on the finish; with lingering notes of sour lemon, lime, green apple, pear, orange, berry, peach, white wine, peppercorn, hay, straw, leather, musty funk, light white vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt flavors; with a great malt/spur/spiciness balance, and no astringent flavors after the finish. Good dryness from sour/spiciness as well. Medium carbonation and light-medium body; with a very smooth, acidic, and lightly grainy mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an outstanding sour saison! All around awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices, brandy barrel, and light-moderate pale malt flavors; very smooth and easy to drink, even with the elevated acidity. A highly enjoyable offering.

Bottle shared at a level 42 tasting Canary wharf 5/5/2016. Many thanks to Leighton for this one. Hazed golden orange coloured pour with a lasting loose beige head. Aroma is spicy acidic sour, citrus lemon, woody, moulded wood, granny Smith apple. Flavour is composed of woody, sour, mouldy wood, tangy apple, sour. Palate is semi sweet, moderate carbonation, woody dry tannin, semi dry finish. Slightly mouldy.

T42 Bottleshare. Thanks to Leighton. Lightly hazy gold beer, thin pale cream colour head. Palate is airy, semi dry and has reasonable fine carbonation. Smooth malts, light creamy sweetness. Mild acetic sourness. Modest brandy tang, Touches of lemon and floral things. Light finish teases out a trace of vanilla. Interesting.

Bottle shared in London - picked up via trade. Pours clear gold with a creamy, white head. Novel aroma, some ripe citrus, a bit of wood, white grape, lemon peel. Medium sweet flavor with more ripe citrus, lemon and tangerine, light metallic notes, white bread, melon, salt. Medium bodied with fine to average carbonation. Lightly warming on the finish, salty, with lemony tartness, some grapefruit, mellow bitter citrus rind. Good stuff.

Bottle at the Level 42 tasting, many thanks to Ell Kay Ess, 05/05/2016. Lightly hazed orange golden with a solid off white head. Nose is funky citrics, wood must, spice, tangy orange, brett strokes, hint of vanilla. Taste comprises bitter lemon, funky melon, light peppery spice, faint buttery strokes. Medium bodied, fine carbonation, semi drying close with a sweet and sour close. Ok ... great aroma but fell away a little, ended a touch buttery.

Bottle big thanks to Leighton at level 42. It pours hazy golden with a small white head. The aroma is fresh, salted lemon, sherbet, minerals, orchard fruits and some bubblegum. The taste is crisp, tart, cracker, lemon sherbet, sour candy, earth, pithy lime, some acidity, white pepper and minerals with a dry finish. Medium body and fine carbonation. A touchy soapy perhaps, but overall decent.

Poured from a blend 1 bottle. Aroma is interesting with a moderate lemon note. Some light malt sweetness with notes of honey and caramel. Peppercorns and anise are light. Some pineapple and tropical fruit notes as well. Pours a slightly hazy, bright, copper orange with a medium large, moderately thick, white head that exhibits decent retention as it recedes slowly. Medium lacing and small legs. Flavor has a moderate acidity with some medium light lemon notes. Moderate tropical fruit and pineapple with some light grape notes. Light sweetness with touches of honey and caramel. Some light peppercorn and faint anise notes. A bit of oak and low bitterness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low to medium low alcohol warmth. Overall, a nice beer with a good flavor profile and aroma. Nice lemon notes that work well with the oak and tropical fruit. I think the spices are well hidden and subtle.

Bottle: Poured a hazy yellow with a white head. Aroma is zesty citrus lemon, funky, and spicy. Taste is very lively on the palate with lemon citrus, sourness, spicy, and woodsy.

At Villagio Della Birra 2015.Hazy golden color, white head. Acidic, berries, some funk scent. Acidic, tart taste. Tart aftertaste. Medium mouthfeel, very low bitterness.

Draft sample @ Oersoep Bierfest 2015, Nijmegen. Couleur oscillant entre l’ambre et léger orange, fin voile et un léger col blanc. Arôme est franchement une belle réussite et allie le côté basique et habituel de la levure sauvage de Jester King qui reste en modération avec des effluves plaisantes de barrique, principalement de notes de Brandy. Ce bouquet en est impressionnant et ponctué par une petite touche épicée. Palais est léger mais laisse une immense marque de barrique qui sans en être surfaite est marquée au niveau de ce qui rappelle le Cognac. Le tout est légèrement aigrelet, petite note maltée qui reste plus discrète avec un fin ajout amer houblonné plutôt noble. En toute fin de bouche se dégage une note fine et épicée probablement du poivre.
