Blend #2 (May 2017) 750mL bottle drunk 2/13/24. Deep, peachy-golden-maize. Small ring of bubbles to edge quickly. Lots of deep, woody acidity. Moderate-to-heavy acetic, moderate-to-heavy lactic, moderate Brett. Some definite Chardonnay character, but it's not as dominant as some of their Chard-aged sours. Bright citrus, vanilla, long oak and rich, honey-like maltiness with no alcohol noted. In the mouth it's moderately sour, though not puckering, with moderate acetic acid and moderate-to-heavy lactic acidity. Big oak, big chardonnay, big malt. Just a big ol' rich, intense, over-the-top sour that SP seems to love making.

2019 version. Pours unclear blonde, medium white head. Scent is full, wine forward. beautifull oak elements. Lovely balance ! Taste is very full, mild tartness, lactic, slightly acetic. Awesome balance. Prounounced wine BA profile. Meidum body, medium carbon. lovely, talk about perfect balance and refinement ? Try this before you call your beer anything as such, brewing friends ;)

Sampled from the tap at the brewery. Pours a hazy light gold with a white head that dissipates to the edges. Aroma has a strong cheesy funk, some yogurt, light sour fruits and light grains. Flavor has the same yogurt and tart light fruit with a bit or light grain backing.
