Farmstead® India Pale Ale Brewed and Dry-Hopped with Nelson Sauvin Hops and Aged in Puncheons

Ralph Waldo Emerson’s essay “Self-Reliance” inspires and compels our persistent reflection, examination, and refinement. From our ongoing pursuit of unique and personally selected hops to our steady quest after refinement and the individualized expression of elegance in all of our beers, Emerson’s urging to “insist on yourself; never imitate” provides motivation towards greater self-exploration, self-expression, and self-realization.

To that end, we present you a reimagining of our Self-Reliance series—once our exploratory pale ales, now our Farmstead® single hop India pale ales featuring varieties of our own selection. This new series allows us to showcase each hop’s characteristics within the framework of our delicately tart, lightly effervescent base beer.

This batch was brewed and dry-hopped with personally selected Nelson Sauvin hops from Freestyle Farms—our agricultural partner in Upper Moutere, New Zealand—and conditioned in oak barrels for nearly 8 months.

From bottle at Wild Festival 2021. Funky and medium bitter with an aroma of citrus, hay, fresh grass, and fruit peel. Dry finish. Wonderful stuff, that Hill Farmstead complexity, dry and crisp.

Bottle at the house on MV. Pours u clear gold with a fluffy, white head. Light sweet flavour with salty-pissy-pithy character, some citrus, decent funk, light acidity. Light bodied with average carbonation toon. Funky finish, a little cat pee, salty bite. Super tasty.

Pours slightly hazed gold into a willi. Bright white micro head with excellent retention recedes leaving trailing sheets. Citrus funk aromas. Medium bodied with sweet aspirin, bandaid funk and earthy sourdough front to back. Lasting, tart lemon finish.

From a large bottle at the DC tasting. Pours a clear gold with an off white head. Aromas of bret and apple. Flavors are a bit tart and delicious.

750ml bottle pours a clear gold with some clumpy white head. Nose is a little IPA and a little saison, simple grist, some dandelions and chrysanthemum. Hop is there. Limey. Green grape. Hand soap. Flavor has some reisling, vinous hop, feels more old world than new. Flowers and dries herbs. Some dried citrus peel peaks at the end. Long, tart, oily finish.

Tap at La Binouze, Paris, Monday, 23rd January 23. Pours a light yellow colour. Aroma is tart, fruity, brett and vinous. Taste is tart, funky, grapes, refreshing, wet wood, lots of complexity. Lovely

Bottle: Poured a golden color ale with a nice large white foamy head with good retention and some lacing. Aroma of light funky Brett notes with nice floral hoppy notes and vinous notes. Taste is also a mix of light funky brett notes with some floral hoppy undertones, some vinous notes and light tropical flavors. Body is about average with good carbonation. Well brewed and really enjoyable with gretsa showcase of Nelson Sauvin hops.

A hazed golden ipa with a thick frothy lacing white head. In aroma, sweet fruity biscuit malt with resinous floral hops, loads of citrus and grapeskins, light cork, light acidic notes, pleasant. In mouth, a nice sweet fruity malt with grapeskins, light acidic notes, Epsom salts, very nice and smooth.
