In February 2022 we moved the brewery from our small unit in Penperlleni in to a larger, more dynamic space in the heart of Cardiff city centre. The move enables us to brew in larger quantities, and with the aid of some brand new equipment, hone in on our brewing processes to drive the quality of our beers forward!
In the same month, we opened our flagship taproom at the same venue as the brewery, meaning that we now have the perfect spot to deliver our beers at their freshest and tastiest!we are brewing on a modest 6bbl kit with 6 fermentation vessels. With Alexis leading the brew exploration, the team remains small and close knit each pitching in to help the other.
Mad Dog Brewery strives to produce an eclectic range of top quality, exciting beers from sour pales to hefty imperial stouts and everything in between. Utilising our fantastic Welsh water and the very best ingredients, we are able to
produce beers of outstanding quality to satisfy even the most adventurous and inquisitive beer aficionado.

On tap at Mad Dog, pours a minimally hazy golden with a small white head. Nose is very gentle, with a soft bready malt character and very light earthy hops — I'd never guess this was Simcoe, nor an APA. Flavour is smooth, with gentle earthy hops, very light pine if I look for it, and lots of bready malt. Carb'd more like a cask ale, but this is kegged. Smooth and drinkable, a slight step up for the usual boring cask bitter.

440ml can from Beer Park. Gluten Free. Brown black colour, foamy tan head leaving lacing and aroma of malt, roasty, chocolate, oak, vanilla. Taste is roasty malt, chocolate, cocoa, dried fruity, caramel, oaky, tangy, with earthy bitterness. Medium bodied, soft carbonation, roasty bitter finish. Nicely drinkable.

440ml can from Beer Park . Gluten Free. Hazy amber colour, bubbly tan foam head and aroma of malt, earthy. Taste is sweet, malty, grain, caramel, biscuit, with some fruity notes and earthy citric bitterness. Medium bodied, soft carbonation, sweetish light bitter finish. Quite OK

Keg draught at the brewpub, Cardiff. Reddish golden brown and hazy with an uneven film of white head. Aroma of damp tea leaves with a strong malty presence. Bittersweet taste with notes of rooibois. It feels a little like a standard ordinary bitter overlaid with rooibois tea. But it's reasonable enough.

4.2% at the brewery tap. Light gold and hazy with a tiny film of white head. Light stone fruit aroma, a little citrus. Sweet taste, the toasty and apricotty notes of Simcoe shining through. Light body with a decent amount of carbonation. Simple but effective. Love it.
