Open the door of the 56 rue Gheude.
Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

The beer poured light yellow in color.
Floral, intense aroma. Light sulphur like. ( could be the vermouth spices as well?) . Floral, wood, rhubarb, hay dominates, Mouthpuckering dry finish, peculiar, pretty good, different.

Cherry looks, cherry nose. Herbal, woody notes. Flavor has light red berry sweetness, cherries. Some tartness. Complex.

Draught Dark pink head, very fast reduced to rim with very fine lace; deep red-purple beer. The pine (as in La Blanche) goes here towards Badedas; plus a real sour cherry aroma, stones and skins included. Superb, out of this world balance between the bitterish, piney vermouth and the fruity cherries. Other red fruit as redcurrant - and the full cherries. Despite all the acids, it feels rather well bodied. Soft carbonation and going towards a - non disturbing - astringency. This is truly an exceptional fruitbeer, even for Cantillon standards. I want more!

Draught Small yellowish-white head over orangeish ochre beer. Vermouth, wormwood, woodshavings, lavender, childrens' putty, pinewoods. Dry, bitterish with limepeel in the background, of course wormwood, pine. Finish has just a tad of sweetness and a hint of coriander. Wry, almost astringent, acidburn and -thinning. Long lasting Vermouth flavours. Special, if not what I would choose everyday.

Small pink-purple head over deep red-purple beer. End of bottle solid deposit. Fruity, fruitsugars and fruitacids in the nose; vinous, red cherries indeed!. Vinous, and again not unlike red fruit as cherries, with hints of raspberry and pomegranate, if red grapes are most prominent. Barrels for light red wine. Once arriving at the finish/deposit, the flavours become earthy. Ultra dry, some acidthinning, smoelentrekker, acidburn. Very nice vinous fruitlambic.

On tap at a Moeder Fontainas. Cloudy garnet pour with a funky nose, wormwood?? Sour and maybe not as well balanced as the Blanche currently but with more depth and complexity. Tasty with more cherry , vinegar, and red grape notes. Good body and mouthfeel.

On tap at Moeder Fontainas. Murky dark yellow pour with a white head. Mild barrel bouquet. Smooth, with pleasant horse blanket and barnyard notes with slightly bitter absinthe undercurrents. Good body and mouthfeel.

Bottle shared by Jack, thanks! Pours a hazy peach amber with a white head that dissipates quickly to the edges. Aroma has a nice tart light fruit with a good amount of flora and a slight earthy note supporting. Flavor has a nice dry sour citrus with a good amount of flora with some oak and herbal notes supporting.

Cloudy dark ruby red with minimal head. Raspberry/blueberry jam, biscuit malt, vinegar, and hay aroma. Moderately sweet raspberry/blueberry, biscuit malt, mildly sour vinegar, and mildly bitter hay flavor. Nice body. Delicious.
