Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

1999 vintage: Pale golden coloured. Crystal clear. Acidic nose. Very tart, cask character, some salt. Complex like a fine whiskey. Very sour.

Brownish red. Very acidic nose. Some hints of cherry, some oak character, but mainly just tart and acidic. I really want to love this very authentic kriek, but it’s dryness is a step too far for me.
Rating for Cantillon De Dolle Proevers Kersengueuze 1991 (04-11-19):
Hazy brownish red. Acidic sweet cherry aroma. Typical Cantillon acidity with a twist of lemon. Sparkling, light mouthfeel. Vague toffeeish hint of oxidation. Good, but not stellar. (8/4/8/4/14)

[750 ml corked bottle] Pours orangey red with a smallish pink head. Grapefruit and tart cherries on the nose. Flavour is really sour with notes of grapefruit, cherries and cherry stones.

2017 vintage, 2025 rate. Hazy and pale, thick head. Aroma is leather, earthy. Soft, sweet, nice pear, peach accents. Sweet and mellow, refined, only mild wildness. Very good. 4 8 8 4 17 = 8.2
2013 vintage. Aroma is dusty, leathery, grapefruity. Sweet, earthy lambic. Soft carbo. Has a complex character and dangerous drinkability.
Original 2001 rate. Earthy and sour, but not as much as the brewery’s other gueuzes. Still a lot of funkiness, and cheesy, dry hay flavours, and a vibrant body. 8 4 4 8 17 = 4.1
2011 vintage, rated 2020. Tan. Very leathery aroma, wheaty. On the palate this is both dry and sweet, complex leather and all that lambicy complexity. Some pitty bitterness. This goes on and on. Juicy, sweet and dry simultaneously. Complex and simple simultaneously Excellent. 4 9 10 5 18 = 4.6

Bursting with sweet fruit, then bringing in a great undercut of lambic tartness. Well structured.

Hazy, amber, thin head. The aroma is a bit cheddary, has a lactic tartness and a little bit of yeastiness. Earthy, woody and a hit of lactic in the finish. Simpler than I remember.

Fantastic. Just pure, unadulterated lambic glory. ..........................
