"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

[2001 Vintage] An unclear very red beer with a small delicate head. The aroma is sweet and strong in cherries. The flavor is dominated by cherries on a good sour background. This is a really good kriek. [Thanks to Joris and Jacob, I have been so fortunate to sample the predecessor of this, brewed to Hopduivel, vintage 1991, sampled 2005: A red beer with a disappearing pink head. The aroma is somewhat faint, but clearly of cherries. While the flavor is just fantastic, a nice dry woody cherry flavor, with lots of power. A delightful beer. 7/4/8/4/16]

[A special treat from Jean-Pierre van Roy at the open brewing day March 6th 2004 - thanks a million] The color is an unclear orange with a white head. The aroma is sour, dusty, and woody. The flavor is very sour with strong notes of grapefruit, lemon, wood, and dust. I believe this is the best Gueuze I have tried.

The color is a clear orange and it has a small white head. The aroma is sour of grapefruit combined with nutmeg - a very fresh aroma. The flavor is sour of grapefruit and lemon with a lovely sour dry woody end.

[I tried this one at the open brewing day March 6th 2004, thanks to Jean van Roy and John White] The aroma is fantastic, sour from the wild fermentation yet sweet with notes of lemon and very well rounded. The color is orange and it has no head. The flavor is thin compared to the promising aroma, it is sour with notes of citrus and grapefruit.

The aroma is very sour. The color is dark orange and it has no head. The flavor is sweet and sour of grapefruit and with a dry woody end - a lovely flavor. The best Faro I have tried.

An orange beer with no head. The aroma is very light but sour. The flavor is very sour of lemon, wood, and grapefruit. The end is very dry and woody.

375 ml corked bottle. Large head, disappears rapidly. Deep golden colour, cloudy when the yeast is poured. Heavenly aroma of barnyard and ensilage with white wine vinegar elements. Flavour is crisp and very dry, reminiscent of a very dry white wine or brut champagne. Not as complex as I expected. Really a beer for the "Champagne Brut" people.

an unclear orange beer with a small head. The aroma is of sour milk. And so is the flavor, though combined with notes of peach. It has a very dry end. This is not my favorite fruit-lambic.

Dark red color, hazy, with large bubbles and frothy pink head. The aroma is very nice, mild barnyard notes and sour berries, touch of jam. Dry but not weak, aggressively sour, with mild acetic notes, light Lambic character, strong sour berry notes, and some astringency in the final, a bit of vegetable bitterness.
Aggressive, good, but not very elegant.

Cloudy light amber color with orange shades. Pungent aroma, cellar mold and raspberries, very strong. Aggressive mouthfeel, dry, astringent, citrusy, with the raspberries first, and the cellar character then.

Beautiful red color, pink head. Strong cellar aroma, magnesia, maybe some fruits. Sour flavor, wood cask touch, very sour, with some notes of grapefruit as well. Tannins and some astringency in the end.

Beautiful light amber color. The aroma is really sour, not enough fruity; it shows mostly the wood cask, and later some magnesia. Absolutely sour (almost like lemon squash), some tannins. A true one; quite good, very aggressive, not really fruity.

Dark blond colour, clean. The aroma is more poopy than all other times I had this beer. Dry mouthfeel with mild acidity, the flavour too is lightly cheesy; there is some of the funky character expected in a Lambic, but also a bit more wood and astringency in the finish. This was mostly stored cold all this time, yet I'd say it seems a bit old.

Hazy to cloudy blond colour with medium head. It's farty, sulfur, lemon, possibly some cork. Gentle carbonation, mild acidity, if possible there is some slight oxidization, the mouthfeel is soft.
Good, but past its peak, it's becoming a different beer.
2020-07-05, corked and capped bottle, vintage 2016/2017, bottled 19 sept 2016, 5.5% ABV, 8-5-8-4-16=41
Cloudy deep blond colour. The aroma is mildly funky, poopy and yeasty notes are more prominent. The mouthfeel is soft and the acidity is mild; moderate complexity, orange peel, some moldy cellar, touch of lemon. It tastes great and it's very approachable.

Hazy golden colour with generous head. Light Brett and cork aroma, wood, the Lambic character is mild. Smooth mouthfeel, dry and with strong astringency; it's very Bretty, and more sulfuric than other bottles and vintages, the acidity is very mild, light foot.
Interesting experience.

Blond-golden colour, clean, with generous frothy head. Intense aroma, funky and poopy. Low level of acidity, it's dominated by the funk, by some astringency, and by citrus peel (lime and pink grapefruit). It's very clean and complex, a beauty.

Bright copper colour, hazy to cloudy; a thin peristent layer of foam. Initially there is some cork smell; the mild Lambic aroma is almost cheesy. The mouthfeel is soft and smooth, the acidity is moderate, it has a good, rustic Lambic character and a note of acetic acid. Not overly complex, but elegant, definitively I like aged Lambic.

Medium Lambic aroma, some eggs (may be the glass), light fart, light bread, very light puke. The carbonation is soft, the mouthfeel is soft too, the acidity is moderate, with moderate flavor of aged Lambic, very light grapefruit peel, and mild astringency in the final.
I said "mild" too many times.

The aroma is cork ridden, not enthusiastic about that. The mouthfeel is very lively, the acidity is moderate, but it has a lemon character that seems stronger than usual, very drinkable, with some funkiness and astringency in the final, but no cork. The cork will likely mellow out and this will grow to be an excellent beer.

Cloudy golden color with generous head; it's highly carbonated. At first, it just smells like an old wet cellar, then there is a more animal presence, horseblanket; some citrus fruits (tangerine and oranges, light cedar); pungent but with grace. The mouthfeel is quite smooth, and as round as a gueuze can be; good malt flavor, definitively not too dry, with sharp but pleasant sourness, and plenty of bitter orange peel; the final is instead more lemony, and lightly astringent.

Golden color; the head quickly fades. As usual, a wonderful sour and citrusy aroma. Taste without compromises: sour, tart, astringent, with clear lemon juice notes; maybe a bit thinner than usual (probably due to the age). Not very bitter, the final (sourness) is quite long.
